How to Make Diced Chicken
The recipes here work well with leftover chicken, or you can cook diced chicken from scratch.
For leftovers, you will generally want something neutrally flavored like fried chicken, grilled chicken, or rotisserie chicken, unless the flavor of the chicken matches the cuisine you are adding it to, for example, leftover chicken fajitas can be added to something like this Chicken Burrito Casserole.
To make diced chicken from leftovers:
- Separate the meat from bones (if there are any.)
- Place meat on a cutting board, and use a large chef’s knife to dice chicken into 1/2- 1 inch pieces.
To make diced chicken breast from scratch:
- Prepare chicken in your preferred method. I like to use my baked chicken breast recipe. It comes out tender, juicy, and perfect every time!
- Let cool 10-15 minutes.
- Place meat on a cutting board, and use a large chef’s knife to dice chicken into 1/2- 1 inch pieces.

How do you not over cook diced chicken?
When cooking raw chicken that has been diced, you want to make sure that the pan is hot when you add the chicken. Then cook without moving for 2-3 minutes. Stir the chicken and continue to cook for 1-2 minutes or until it reaches 165˚F. Use a meat thermometer to ensure you don’t over cook the chicken.
How to easily dice chicken?
If the chicken is cooked, remove from any bones, and use a large chefs knife to dice the chicken.
If the chicken is raw boneless, skinless chicken breast or thighs, use the chefs knife to cut the chicken into 1 inch pieces. Depending on the thickness of the chicken, you can pile 1-3 pieces together to cut more at once.
Why do you let chicken sit before cutting?
After cooking, let the chicken sit for 5-10 minutes before cutting. This allows the juices to reincorporate into the meat and keeps the chicken more tender and juicy.
Skillet Chicken Pot Pie
Ingredients
- 2 pounds boneless skinless chicken breast, or thighs
- 29 ounces cream of chicken soup, (2 cans)
All Purpose Chicken Seasoning
- 1/2 cup sour cream
- 1 tablespoon chicken bullion, or chicken base
- 1 teaspoon poultry seasoning
- 12 ounces frozen mixed vegetables
- 1 onion, diced
- 1 sleeve ritz crackers
- 1 tablespoon butter, melted
Instructions
- Combine the cream of chicken soup, sour cream, chicken bullion, and poultry seasoning in the slow cooker and mix well.
- Stir in the frozen vegetables and diced onion. Nestle the chicken into the soup mixture.
- Cook on high for 2.5-3 hours, or low for 3.5-4 hours. Chicken should be 165˚F internal temperature when done.
- Remove chicken and shred, then stir back into the mixture.
- Crush the Ritz Crackers into a fine crumb. Mix the crumbs with the butter, then toast them in a skillet over medium heat until they are golden brown, about 3-4 minutes. Alternate method- Spread crumbs on a baking sheet and bake at 350˚F for 5-8 minutes or until golden brown.
- Serve a scoop of the chicken pot pie, topped with a spoonful of crumbs.You can also top the whole chicken pot pie with the crumbs, but I like to keep them separate so that if we have any leftovers I can reheat and top with crumbs. If you save leftovers with the crumbs on it, it will still taste good, but not be crispy anymore.
