Ingredients + Substitutions

  • Sirloin tip roast – You can find sirloin tip roast in the meat department of most grocery stores.
  • Onion soup mix â€“ Store-bought is just fine, or use my homemade onion soup mix.
  • Onions – Any kind of onions you like or have on hand will work here—yellow, white, sweet, or red. It may look like a lot but they cook down significantly.
  • All-purpose flour (optional) – You’ll only need this if you make the gravy.
  • Parsley (optional) – Garnish with parsley for a pop of color and some herbaceous flavor.

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Crock Pot Sirloin Tip Roast.

How to make sirloin tip roast in crockpot step 1: Chop onions and place them in the base of the crockpot.

Slice the onions and place them in the base of the slow cooker to form a bed for the pot roast to rest on.

How to make sirloin tip roast in crockpot step 2: Place roast on the onions and cover with onion soup mix.

Rub the sirloin tip roast all over with the onion soup mix and place on top of the onions. Pour any remaining soup mix left on top. No additional liquid is needed as the roast and onions will release liquid as they cook.

How to make sirloin tip roast in crockpot step 3. Slow cook the pot roast for 6-8 hours.

One done remove the roast and shred. Remove the liquid and use part to mix in with the roast and the rest to make gravy.

Return the shredded sirloin tip roast to the crockpot to keep warm until serving.

Recipe Tips

  1. Don’t trim the fat – Or, at least, don’t trim it before you cook the roast. It’s much easier to trim the roast after it cooks. Once the roast is done, you can pull away any fat easily, and then shred the meat with forks.
  2. Layer in the ingredients – The way you layer everything is important; start with the sliced onions at the bottom of the pot, then add the roast and rub it with the onion soup mix. The juices from the meat will drip down and soften the onions, while the aroma of the onions will infuse the meat with flavor.
  3. Don’t try to speed things up – Low and slow is the way to go! Sirloin tip roast really needs that long, slow cooking time to make it tender and juicy. You can even put this in right before you go to bed and wake up to a perfectly cooked, fork tender, fall apart Sirloin Tip Roast in the morning!
  4. Keep the meat tender – And speaking of tender meat! I always add a cup of the juices back to the meat after shredding it to keep it from drying out.
  5. Make perfect lump-free gravy â€“ You can serve this recipe with au jus or make the optional gravy. To make the gravy, start by cooking a cup of the juices with 1/4 cup of flour and whisk until the mixture is thick and smooth. Then slowly pour in the rest of the juices. Dumping all of the liquid in at once will give you lumpy gravy and no one wants that!
  6. Extra gravy â€“ If you like extra gravy, you can add a cup of beef broth to the crockpot before cooking so there will be even more juices to make gravy with in the end.

Recipe Short Cuts

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Use your Instant Pot instead – Although low and slow is best, if you’re short on time, the pressure in an Instant Pot will help tenderize the meat in your sirloin tip roast. 
  • Buy pre-sliced onions – Many grocery stores sell sliced onions in the produce section or the salad bar. You’ll save on prep time (and save a few tears too!) by using onions that are pre-cut. Another option is to use frozen pearl onions.
  • Swap in store-bought gravy – There’s nothing wrong with buying brown gravy at the grocery store if you’re short on time and don’t want to make your own!
  • Searing the meat– In my recipe we skip giving the cut of beef a sear in a pan before placing it in the slow cooker. Since we are shredding the meat it is my opinion that searing adds very little flavor and texture, while adding a lot of extra time and effort in prep. So feel free to sear the sirloin tip if you prefer, but I love using this short cut to make this recipe so easy!

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Sirloin Tip Roast with Potatoes and Carrots – Make this into a one pot meal by adding quartered Yukon gold potatoes and baby carrots to the bottom of the slow cooker with the onions. Now you’ve got your sides and your main dish in one crockpot!
  • Add mushrooms to the gravy – SautĂ© sliced mushrooms in a pan with butter and then proceed with the rest of the gravy recipe as written. This will add another layer of savory flavor to the gravy. 
  • Use another braising cut of beef – Chuck roast, English roast, and rump roast can all be used instead of sirloin roast.
  • Spice it up– This recipe utilizes dry spice mixes to keep the recipe super fast and easy, however, if you want to make it from scratch you can either use my homemade onion soup mix recipe, or a combination of salt, black pepper, rosemary, garlic powder, onion powder, thyme, and paprika. Throw in a splash or worcestershire sauce or soy sauce and you are in business!

Freezer Meal Instructions

Making this Crock Pot Sirloin Tip Roast recipe into a freezer meal is simple! You can freeze this meal before or after cooking for flexibility based on your needs.

To Freeze Slow Cooker Sirloin Tip Roast BEFORE cooking

  1. Slice onions and coat the sirloin tip roast with the seasoning.
  2. Add both to a freezer bag, or freezer friendly container.
  3. Once ready to cook, thaw for 48 hours in the refrigerator.
  4. Continue at step 3 to cook per recipe directions.

You can store the sirloin top roast in the freezer for up to 6 months when prepared this way.

To Freeze AFTER cooking

  1. Transfer leftover Crock Pot Sirloin Tip Roast to a freezer bag or freezer-safe airtight container.
  2. When you’re ready to eat, let the roast thaw in the refrigerator overnight if you’ve frozen it.
  3. Place the meat in a baking dish with leftover juices or beef broth, cover, and cook at 325ÂşF until the meat is heated through.

You can store this recipe in the freezer for up to 1 month.

What to Serve with Crock Pot Sirloin Tip Roast

Since this dish has the classic flavors of savory roasts and other beef recipes, it will pair well with many of your favorite traditional American side dishes. There are both classic options like Green Bean Casserole or a this comforting Easy Baked Macaroni and Cheese as well as some healthy options to keep it light.

  • SautĂ©ed Mushrooms with Garlic Butter – You can place your beef sirloin tip roast right on top of vegetables.
  • Brown Butter Broccoli – If you’re looking to keep your sides light, this broccoli is perfect.
  • Instant Pot Baked Potatoes
  • Easy Homemade Mashed Potatoes – You have to serve your Crock Pot Sirloin Tip Roast with mashed potatoes if you make the optional gravy. 
  • Savory Sweet Potatoes– This is one of my favorite sides!

You can choose one or add a few sides to make a wholesome, well rounded dinner. 

Crock Pot Sirloin Tip Roast Leftovers

If you have leftovers after making Crockpot Sirloin Tip Roast, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days
  • in the freezer up to a month

  • Shepherd’s Pie – Transform your leftover sirloin tip roast into a hearty shepherd’s pie. Simply use your favorite recipe and skip cooking the beef; instead, swap in your leftovers.
  • Epic Sirloin Tip Sandwiches – Layer the onions and beef onto ciabatta rolls with provolone and cook on a griddle or in a panini press. Serve with a side of au jus for dipping!
  • Baked Potatoes – Make a batch of baked potatoes in the instant pot, cut them open, and top them with leftover Crock Pot Sirloin Tip Roast, sour cream, and chives or thinly sliced green onions. The crockpot is the easiest way to make tender, juicy, flavorful sirloin tip roast. Just a few minutes of prep time and you're done!

Ingredients 

  • 3-4 pound sirloin tip roast
  • 2 ounces onion soup mix, (1 packet)
  • 3 onions
  • 1 cup beef broth, (OPTIONAL- See note)

Optional Brown Gravy

  • 1/4 cup all purpose flour

Garnish

  • 1/4 cup freshly chopped parsley

Instructions 

  • Remove the peel, ends, and roughly slice the onion. Place the onion in the bottom of the slow cooker.
    Add beef broth if you want to make extra gravy. (see note)
  • Coat the roast on all sides with onion soup mix.
  • Cook on low for 8-12 hours. Once done, remove any excess fat and discard. Then shred the pot roast.

Optional gravy:

  • Separate the onions from the juices. (It doesn't have to be perfect) Remove one cup of the juices and mix into the shredded roast.
  • Then add 1 cup of the juices into a sauce pan and whisk in 1/4 cup of flour. Cook over medium heat for 1-2 minutes or until it thickens.
  • Slow whisk in remaining broth and simmer on low until the gravy reaches desired thickness

Recipe Notes

Liquid:
My method for making pot roast does not require adding liquid before cooking. The sirloin tip roast, and the onion will release liquid as they cook and the lid from the slow cooker keeps the moisture from escaping. You will have plenty of juices in the end without adding additional liquid.
Extra gravy:
If you want to make extra gravy for the sirloin tip roast, you can add an additional 1 cup of beef broth to the crockpot with the onions. This will give you even more liquid to make gravy with. If you don’t plan on making gravy, this ingredient can be omitted.
Substitutions:
  • Onion soup mix – Store-bought is just fine, or use my homemade onion soup mix.
  • Onions – Any kind of onions you like or have on hand will work here—yellow, white, sweet, or red. It may look like a lot but they cook down significantly.

    This “bs” recipe is how I’ve done my roast for years. A sirloin tip is my favorite roast, and this recipe is very tasty and so easy to do. Adding liquid IS mentioned in the recipe (the beef broth), but only absolutely necessary if you want gravy. I slice my roast and serve with mashed potatoes and the gravy made like Kimber says, but you could also put carrots and potatoes in the bottom along with the onions for a one pot meal. Or just scroll on if you can’t tell from reading that it’s going to be a good recipe.

    This sounds delicious. I put it in the crock pot this morning. Can’t wait to try it for dinner tonight 🙂

    I’m swapping sliced onions for 2 bags of frozen pearl onions. I sprinkled powdered beef base over it and some minced garlic.

    I’m going to use the juices to make a mushroom gravy.

    Super easy and very good. I did end up searing our roast just because I like to add extra seasoning to just about every recipe. Seared it in salt, pepper, and dried garlic. Placed it over the onions in the crock pot with some added fresh garlic gloves. Paired it with a rice pilaf for tonight and will do mashed cauliflower tomorrow night.

    This recipe is bs, posted for someone to make money off clicks. Looks like they stole it from somewhere and couldn’t be bothered to even read it.
    Nothing in ingredients or instructions about adding any liquid to the slow cooker but instructions talk about how you get 2 cups plus of liquid out later.

      Hi, I am extremely sorry you feel that way. I actually spend between 8-12 hours just crafting this recipe post so that it is most helpful to my readers. I take time to offer tips, things I find helpful when prepping, variations, and even ideas for what to do with the leftovers. Apparently though I wasn’t thorough enough with the explanation of the recipe itself and it seems you found that very frustrating.

      This recipe calls for no liquid to be added to the pot because that is my method for making a roast in the crockpot. As soon as it starts to cook, both the roast and the vegetables will start to release moisture. This moisture will accumulate as you cook and once it is done, yes, you will be able to remove full cups of liquid. I like this method best because I don’t like my roasts to cook fully submerged in liquid. I think it keeps them more tender this way.

      I am sorry that you were frustrated by reading the recipe, but I would have been happy to answer any questions you had without unkind accusations. This blog is my life’s work, and I am extremely proud of what I create and put out there to help busy moms get dinner on the table. I am sorry if you feel that the instructions weren’t thorough enough for you to realize that I actually did mean exactly what I said.

        I do have a question. I am one that only cooks by recipe. I have to thought it together talent. And I don’t trust myself to dare.
        So the recipe call for onions but the instructions just say onion. is onion plural or just one? you lost me. So i put 1 1/2 onions in pretty much because because we don’t eat them all and my crockpot is a smaller size. lol

          Sorry for the confusion! I put all 3 onions, sliced up, in the bottom of the crockpot. It seems like a lot of onions but they cook down a lot and become kind of a caramelized texture so it isn’t as much as it seems. I hope you enjoy the recipe!

    So easy and tasted delicious! There wasn’t much liquid at the end so only had a small amount to stir through the shredded meat and a small amount for gravy – I added some red wine to the gravy part and then just reduced it down slightly – perfect 🙂

    Wow!! I could’t believe this was so easy to make and how delicious it was. I put it in Sunday morning then we fed the whole family for dinner. I made the gravy and served it on the side and we put it all over mashed potatoes. We will be making this once a month!
