Family Meal Plan
MONDAY
- Main Dish: – Chicken Pomodoro– This dish will make you feel like a 5 star chef! It is so simple, that I would call it fool-proof, but the result is an incredible, restaurant quality meal with tender chicken in a homemade sauce!
- Side Dish:
- Roasted Asparagus – Perfect to continue with that fancy feel (and only we will know how easy it was.)
- Mashed Potatoes– This recipe is extra creamy!
TUESDAY
- Main Dish: Tex-Mex Chicken Fajitas– This marinade is a family favorite and can be made on the grill, or in a skillet.
- Side Dish:
- Side salad – Top it with this amazing jalapeno ranch dressing
- Mexican Rice – Tastes just like your fav Mexican restaurant!
WEDNESDAY
- Main Dish: Zesty BBQ Pulled Pork– The crockpot does the hard work for this delicious pork. This should be enough to feed the family, then use the leftovers to make a new meal on Friday.
- Side Dish:
- Broccoli Slaw– This recipe is super simple and extra delicious!
- Parmesan Ranch Smashed Potatoes– This is one of my all time favorite ways to make potatoes. SO GOOD!
THURSDAY
- Main Dish: Cajun Chicken Pasta – Make it with pasta, or keep it light as Cajun Chicken Zoodles. Both have the same great flavor!
- Sides:
- Cajun Roasted Veggies– The perfect wholesome side with complimentary flavors!
- Sides:
FRIDAY
- Main Dish: Pulled Pork Enchiladas– These are AMAZING! Use the leftovers from Wednesday. Roll the BBQ pulled pork in tortillas and place in a casserole dish. Pour green enchilada sauce over the top and sprinkle with cheese. Bake at 400˚F for 15-25 minutes or until heated through. Top with pico de gallo and sour cream.
- Side:
- Sautéed Peppers and Onions
- Cilantro Lime Rice– Fresh, simple, and delicious.
- Side:
- Dessert – Cornflake Cookies– One of my all time favorites! This cookie has an unexpected crunch from the cornflakes!
APPETIZER
- Green Chile Cheddar Dip– Grab these with a bag of chips and you have the beginning of a delicious day.
