Family Meal Plan
MONDAY
- Main Dish: – Spinach Artichoke Chicken– With just minutes of prep, this this the most easy and delicious way to start off the week! The comforting flavors in this recipe are among some of my all time favorite. It doesn’t get much better than tender chicken smothered in creamy spinach and artichokes!
- Side Dish:
- Mashed Potatoes– Love serving the chicken on a bed of mashed potatoes to soak up all of that amazing creamy sauce!
- Garlic Bread– My kids can’t have this meal without garlic bread and this is our favorite recipe.
TUESDAY
- Main Dish: Ground Turkey Tacos– These tacos are lighted up with ground turkey, but are so flavorful you will just be thinking how delicious they are, not how healthy! Serve them up in shells, or burrito bowl style with lots of toppings!
- Side Dish:
- Toppings- Black bean corn salsa, Sour Cream, Salsa – This homemade version is so EASY, Guacamole, Shredded, cheddar cheese, chopped cilantro
- Rice- Try Cilantro Lime Rice or my easy Tex-Mex style rice
- Beans- Try crock pot refried beans, or these easy black beans (made from canned beans!)
WEDNESDAY
- Main Dish: Brown Butter Spinach Tortellini– The rich butter sauce makes this 20 minute tortellini pasta dinner over the top delicious. This meal is written as meatless, but you can add in diced ham or shredded (or rotisserie) chicken if you prefer more protein.
- Side Dish:
- Garlic Roasted Veggies– This are quick, classic, and so delicious! Highly recommend.
- Tomato Mozzarella Salad– This salad is fast, delicious, and saves well if you have leftovers!
THURSDAY
- Main Dish: Classic Taco Salad – This easy meal gives Tuesday’s leftovers new life! This classic taco salad recipe is one of the only ways that my kids LOVE to eat salad! SO many of their favorite flavors they don’t even notice all the veggies they are eating!
- Sides:
- Guacamole– Tastes just like the restaurant kind and I love. topile it on top of this sald!
- Ranch– This homemade ranch takes 5 minutes to make and is the BEST! It will 100% take your sald to the next level!
- Sides:
FRIDAY
- Main Dish: Chicken Wild Rice Soup– This soup is my best friend’s favorite recipe that I make. She tells me that she makes it at least once a week in the winter months. It is cozy, comforting, loaded with tender chicken, veggies, and rice and a family favorite!!
- Side:
- Side salad- So some simple mixed greens with a drizzle of balsamic vinaigrette and a sprinkle of parmesan.
- Side:
- Dessert – White Chocolate Macadamia Nut Cookies– These big, thick, bakery style cookies are almost irresistible!!
APPETIZER
- Crispy Toasted Tortellini– This is the last recipe on the list, but the #1 must try this week! These are so simple and perfect for snacking, an appetizer or even a fun lunch. Toasty, garlicky and crisp on the outside, and tender and cheesy on the inside. Trust me on this. You need these in your life!!
