Family Meal Plan
MONDAY
- Main Dish: – Chicken Stuffed Poblanos– This is a great way to switch up the dinner routine. These stuffed peppers are packed with flavor and SO EASY!
- Side Dish:
- One Skillet Mexican Rice – These are fast and oh, so delicious.
TUESDAY
- Main Dish: Mexican Beef Skillet– This is a one and done kinda meal. With tender ground beef, rice, veggies, and mexican seasonings all simmered together in one skillet!
- Side Dish:
- Guacamole– Serve it right on top!
- Chips and Salsa – This homemade salsa is our favorite (and only takes minutes to make!)
WEDNESDAY
- Main Dish: Baked Caesar Chicken– If you love Outback, you will LOVE this recipe! If you haven’t had Alice Springs Chicken, you are in for a treat.
- Side Dish:
- Mashed Potatoes– This recipe is super simple and extra creamy
- Broccoli and Apple Slaw– The classic way. Simple and delicious!
THURSDAY
- Main Dish: Big Mac Skillet – Comfort food without the guilt! This dish gives you all the flavor of a Big Mac, but made in a skillet at home in minutes. You can eat it as a salad (like me!) or on a bun (like my kids) so it is customizable for each person.
- Sides:
- Garlic Smashed Potatoes– Get the flavor of french fries in these oven baked potatoes!
- Veggies and Ranch– These are great to snack on before the main meal or give a little extra wholesome boost to the dinner.
- Sides:
FRIDAY
- Main Dish: Taco Zucchini Boats– Use the leftovers from Tuesday to start this easy Friday meal. Cut zucchinis in half and then hollow out the middle. Pile the leftover Mexican beef inside. Bake on a cookie sheet covered at 400˚F for about 20 minutes, then uncover, add a sprinkle of cheese and return to the oven for another 5-8 minutes or until the cheese is melted.
- Side:
- Toppings: Serve with sour cream, guacamole, and salsa
- Green Chile Cheddar Mashed Potatoes– These are a fun flavor addition to the meal!
- Side:
- Dessert – Softest Sugar Cookies– II made these this week and they always get RAVE reviews!
APPETIZER
- Buffalo Chicken Pinwheels– These are a tried and true appetizer and also make a great light lunch!
