Family Meal Plan
MONDAY
- Main Dish: – Lemon Basil Chicken Pasta– Your family may not even believe you made this because it tastes just like a restaurant! The best part though, is that it only takes 20 minutes and a few pantry staples to make!
- Side Dish:
- Pesto Roasted Vegetables – These are fast and oh, so delicious.
- Garlic Bread– Our favorite recipe!
TUESDAY
- Main Dish: Mexi Beef and Rice Skillet– All the flavor, in a family approved quick cooking dish!.
- Side Dish:
- Black beans – or refried if your family prefers
- Mexican Veggies – these are fast and I LOVE using them in leftovers (if you have any!)
WEDNESDAY
- Main Dish: Southwest Bone In Pork Chops– If you love Outback, you will LOVE this recipe! If you haven’t had Alice Springs Chicken, you are in for a treat.
- Side Dish:
- Mango Salsa– Serve a scoop right on top of the pork chop
- Cilantro lime rice– Put the pork chop right on top with the salsa. Get a bite of all 3 and it is HEAVEN!!
THURSDAY
- Main Dish: Spinach Artichoke Baked Chicken – Dinner time comfort food that is packed with veggies! This one dish wonder is a family favorite!
- Sides:
- Garlic Smashed Potatoes– Get the flavor of french fries in these oven baked potatoes!
- Crispy Roasted Brussels Sprouts– These are so good, even the kids LOVE them!
- Sides:
FRIDAY
- Main Dish: Southwest Ranch Pork Quesadillas – Use the leftovers from WEDNESDAY to start this easy Friday meal. Chop leftover pork chops. Place over half of a large tortilla. Add chicken, shredded cheese, and your choice of corn, black beans, and drained diced green chiles. Melt butter over medium heat, and once the skillet is hot, fold the tortilla in half and grill until golden brown on each side. Serve with ranch for dipping.
- Side:
- Tortilla Chips
- Jiffy Corn Casserole– So easy and SO GOOD!!
- Side:
- Dessert – Chewy Chocolate Brownies– If you haven’t made brownies from scratch… now is the time, and these are some of the best!
FOOTBALL FOOD & APPETIZERS
- Green Chile Cheddar Dip– This is ALWAYS a favorite!
- Jalapeno Ranch Dip – My friends request this more than anything
- Crock Pot Party Meatballs – Classic style
- Hawaiian Meatballs – my favorite twist on the classic
- LOADED Taco Dip – We have one upped your seven layers!
