Keto Green Chile Chicken

This recipe is so easy, you can have it prepped and ready to bake in under 15 minutes, that’s right I said 15 minutes.  I love a quick and easy recipes on these busy school nights.  The best part about this recipe is the only cleanup you will have is one bowl and a spoon. Sounds like a winner to me.  That is music to my ears.

What are Green Chiles

If you have never cooked with Green Chiles before, you are in for a treat! These are mild green chile peppers grown in the southwestern part of the United States and Mexico.  Although there are different varieties, most, including the ones that we cook with in this recipe, are mild so they work to enhance the flavor of the dish without adding much heat.

How to Serve Keto Green Chile Chicken

Let’s talk about the combination of flavors in this recipe.  There is something magical that happens when you combine green chilies, cumin, cream cheese and garlic.  Next you add your protein… the chicken and you get this delicious combo.

This recipe would be delicious served over a bed of sautéed spinach, cauliflower rice, or greens of your choice, or any of the other options listed below.

Top this off with a spoonful of sour cream or my favorite homemade Pico de Gallo, or even some fresh chopped cilantro for the perfect meal!

These are some of my favorite ways to serve this chicken bake that are Keto friendly:

Keto Friendly Serving Ideas

  • On top of sautéed spinach
  • On top of cauliflower rice
  • Serve with roasted vegetables
  • Zoodles- spiralized zucchini
  • Mashed cheesy cauliflower

You can always just serve this with a yummy green salad, topped with my crazy delicious homemade ranch dressing.

How to Make Keto Green Chile Chicken

This Keto Green Chile Chicken Bake is easy and should come together quickly.  I will walk you through tips and tricks and answer any questions you have about the recipe.

Can I use other cuts of meat for this recipe?

Yes, you can use chicken thighs or tenderloins if you prefer.  Just make sure to adjust your chicken time a little less if you are using smaller cuts of meats. To ensure your dish is done, use a meat thermometer and cook to 165˚F.

How do I store leftovers from the Keto Green Chile Chicken ?

This chicken stores really well.  The flavors are sometimes better the next day after the chicken has marinaded in the sauce overnight.  You can place them in an airtight container in the refrigerator for 3-4 days.

My family is not on a “Keto” diet, how can I serve this to them to make it a regular meal?

My kids love this on top of rice with a side of black beans.  This is also delicious cut up and served on a tostada shell.  The leftover would be delicious as a nacho topping as well.

Is this dish too spicy for kids?

When buying the green chiles make sure to buy the mild ones and you will not have a problem with it being to spicy.  This dish has a rich flavor and the green chiles just add to the flavor.

Can I freeze Green Chile Chicken?

Yes!  You can put it in individual serving sized containers and keep it in the freezer for up to a month.

This Green Chile Chicken is the perfect easy and flavorful low carb meal.  It is loaded with tender chicken, tangy green chiles, the perfect amount of southwestern spices and finished off with cheese!

Ingredients 

  • 3-4 Boneless skinless chicken breasts, trimmed
  • 1 8 oz package cream cheese, softened
  • 1 4 oz can chopped green chilis, I prefer Old El Paso
  • 1 cup monterey jack cheese, shredded
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions 

  • Heat the oven to 375F.
  • In a medium bowl, mix the cream cheese, garlic powder, cumin, salt and pepper until combined. Then stir in the green chilis and stir until evenly mixed.
  • Lay the chicken breasts flat in a baking dish. Cover the chicken breasts with the green chili mixture. Then top with the monterey jack cheese.
  • Bake on the middle rack for 35-45 minutes or until chicken is cooked through and the juices run clear.
  • Serve hot over sautéed spinach or cauliflower rice. Enjoy!

  • You can cut the chicken in half, chunks, or use chicken tenderloins in lieu of full chicken breasts to make serving easier. Cooking time may be reduced.

    Flavor was great but it was really runny. Is the sauce supposed to be a little thick?

      It will thicken a bit as it cools, you can also either pour our some of the juices released by the chicken, or mix them into the thicker sauce.

      Next time, try slicing it so that it is thinner. Some chicken breasts can be so thick which causes it to take forever to cook! I hope it turned out for you!

    We will make this a staple. I didn’t have the time to bake it so I put the sauce in a pan and used cut up chicken breast nuggets and sautéed them. We ate it over steamed broccoli. soooooo good. I think it was 20 min total.
    We like heat at our house so I added red pepper flakes and ground jalapeño powder. Mmmmmm. Next time I think I’ll add actual jalapeños.

    Thank you, this was delicious! I was looking for something to make with some cut-up chicken breasts that I had on hand and this sounded like a good alternative to an old recipe I used to make called Chicken Acapulco, but low carb, hooray! I didn’t have Monterey Jack cheese, so I used cheddar.

    Also, I placed it on top of Edamame spaghetti which was a new item I found at Costco.

    This was sooo yummy! I added TJS Garlic salt and a dolip of sour cream to the cream cheese mix. Also, served it over spaghetti squash. It was phenomenal!
