Family Meal Plan
MONDAY
- Main Dish: – BBQ Pork Sliders– Use this crock pot pulled pork recipe and grab some Hawaiian rolls to use as slider buns. This is a great way to start the week because the leftovers are so versatile!
- Side Dish:
- Watermelon – Quick and easy, and the best time of year to enjoy it.
- Broccoli Slaw– You can pile this on the sandwich or eat it on the side. My kids really enjoy this version with apples!
TUESDAY
- Main Dish: Mexican Beef and Rice Skillet– This one skillet dinner has all the flavor and is perfect for a busy night and is perfect if you have a pound of ground beef ready to use. My husband and I like to eat it in a bowl with toppings, while my kids eat i wrapped in a tortilla.
- Side Dish:
- Toppings –
- Shredded lettuce
- Sour cream
- Guacamole
- Black olives
- Jalapeno ranch dressing
- Pico de Gallo

WEDNESDAY
- Main Dish: Alice Springs Chicken– If you love Outback, you will LOVE this recipe! If you haven’t had Alice Springs Chicken, you are in for a treat with layers of tender chicken breast, honey mustard, sweet onion, and cheese.
- Side Dish:
- Mashed Potatoes– This recipe is super simple and extra creamy
- Garlic roasted veggies– The classic way. Simple and delicious!
- Garlic bread- Perfect to bring it all together.
THURSDAY
- Main Dish: Pulled Pork Stuffed Baked Potatoes – Use the leftovers from Monday to make this meal EASY! You can also grab pre-cooked pulled pork at the store (as in the video example.) Bake potatoes and split in half. Stuff with pulled pork and top with cheese. Bake in the oven at 350 until heated through and the cheese is melted. Remove and top with sour cream and green onions.
- Sides:
- Garlic Parmesan Broccoli– This easy roasted broccoli is the only way my kids like to eat it, and it can cook right alongside the potatoes.
- Buttermilk Cornbread– A slice of this cornbread makes this dinner pure heaven!

FRIDAY
- Main Dish: Tuscan Tomato Tortellini Soup- This soup is so simple and so delicious. It is a great Friday night meal, and leftovers are always a hit for an easy lunch or dinner over the weekend.
- Side:
- Garlic Cheese Bread– This is like a grilled cheese, without all the effort. Perfect for dipping.
- Chicken Caesar Pasta Salad– Make with our without. thechicken for a great compliment to the soup.
- Side:
- Dessert – Bakery Style Chocolate Chip Cookies- These are my go-to chocolate chip cookie recipe. I probably made 100 dozen cookies experimenting and finally got to this recipe which is the absolute BEST if you liek thick and chewy cookies!
APPETIZER
- Green Chile Cheddar Dip– Grab these with a bag of chips and you have the beginning of a delicious day.
Meal Plan – Week 129
MONDAY
- Main Dish: – Lasagna Chicken Bake– Packed with ALL the delicious flavor of Lasagna, but WAY quicker to make, this protein packed chicken dinner is fast and filling for a busy week night win. Plus, the kids were obsessed with the cheesy sauce!
- Side Dish:
- Garlic Bread – You need this to soak up all the delicious sauce!!
- Pasta- We like angel hair or penne pasta, or if you want to keep it lighter, you can use spaghetti squash, zoodles etc.
TUESDAY
- Main Dish: Zucchini Enchilada Bake– It’s zucchini season, and this Mexican style casserole is one of my favorite ways to use it!
- Side Dish:
- Side salad – Top it with this amazing Cilantro ranch dressing
- Toppings – Add sour cream, guacamole, or pico de gallo to the top for even more deliciousness!
WEDNESDAY
- Main Dish: Crockpot Tuscan Chicken– This recipe is a reader favorite! The combination of how easy it is to prep and how delicious the end result is to eat, is a rare combination!
- Side Dish:
- Garlic Mashed Potatoes – These work well if you want to scoop the meat and juices right on top!
- Italian Tortellini Salad– Love this as a compliment, and the leftovers make great lunches.
THURSDAY
- Main Dish: Steak Fried Rice – This is a regular family request, and conveniently, one of my fastest recipes to make!
- Sides:
- Yum Yum Sauce– We can’t make it without the sauce that goes on top!
- Sriracha Slaw– If you don’t mind a little spice, this is my favorite side (I actually put it right on top!)

FRIDAY
- Main Dish: Baked Chicken Tenders– Perfect for a fun Friday meal, these healthier chicken tenders are easy to make, easy to clean up, and so, so good.
- Side:
- Dipping Sauce- my favorites are homemade ranch (easier than you may think!), or honey mustard sauce.
- Baked Potato Wedges– These can cook alongside the chicken and have all the french fry vibes.
- Side:
- Dessert – Smores Bars– All the great flavor in a campfire free version!
APPETIZER
- Jalapeno Ranch Dip– This recipe is used more at our house for dipping than it is for salad dressing. It is amazing with ruffles or tortilla chips, a veggie tray, or any type of fried food. I am “famous” for this recipe locally and always asked to bring it if I go somewhere! (You can adjust the heat so it is very mild, or more spicy based on your preference)
