Family Meal Plan
MONDAY
- Main Dish: – Rotisserie Chicken Salad– This dinner is made easy by starting with a rotisserie chicken! Pair it with the fact that this saves like a charm and can be used for meal prep or on-the-go meals for lunches or dinners all week and you have the perfect Monday meal.
- Side Dish:
- Broccoli Slaw – This homemade version is packed with lots of veggies and good-for-you stuff, but still tastes AMAZING!
- Garlic Smashed Potatoes – Family favorite! These are so so so good!
TUESDAY
- Main Dish: Rotel Chicken Bake– All you have to do is season the chicken and add two ingredients for a HUGE dinner time win! This easy chicken bake is what quick and easy dinner dreams are made of!
- Side Dish:
- Rice– You can go with Chipotle-style cilantro lime rice or a more traditional Mexican rice
- Beans– I love black beans to serve with this meal. You can make dried black beans in the Crock Pot, or just doctor up some canned black beans to taste amazing!
WEDNESDAY
- Main Dish: French Onion Meatballs– I have had 3 people randomly tell me this week how much they love this recipe! So I decided it had to go on the meal plan for next week. Beefy meatballs cooked with savory broth and lots of cheese… what’s not to love?!
- Side Dish:
- Garlic Mashed Potatoes– My favorite way to eat the French Onion Meatballs is right over a scoop of mashed potatoes.
- Roasted Garlic Parmesan Broccoli– This side is quick and easy and my kids favorite way to eat broccoli.
THURSDAY
- Main Dish: Brown Butter Spinach Tortellini -This may just be the fastest dinner ever! Everything just works together to come together quickly in this meal. This is a meatless meal by design, but you can easily add protein if you prefer by adding chopped ham, rotisserie chicken, or sliced pepperoni or salami.
- Sides:
- Side Salad– a simple green salad with this balsamic vinaigrette is perfect!
- Cheesy Garlic Bread– Because garlic bread!
- Sides:
FRIDAY
- Main dish: Buffalo Chicken Nuggets – These baked nuggets are super easy, healthier than the alternative, and so DELICIOUS! To make this meal extra special, take the extra 5 minutes and make this blue cheese dressing from scratch. You won’t believe how good it it!!
- Side:
- Carrots and Celery– An easy side for an easy Friday! More to dip in that yummy dressing!
- Chips
- Side:
- Dessert – Chocolate No Bake Cookies- These are a personal favorite and my pick when I am having a chocolate craving! They are quick to make and don’t require an oven.
APPETIZER
- Hawaiian Meatballs– A crock pot filled with these will always be a crowd pleaser!!!
- Chipotle Corn Salsa– This snacky salsa can be used to top any Mexican style food, or just goes great with chips for a snack. The recipe was one Chipotle originally shared on their TikTok account!
