Family Meal Plan
MONDAY
- Main Dish: – Chicken Caesar Pasta Salad– My favorite part of this salad is that it is light enough, not to weigh you down, especially as the weather is getting warmer, but still filling enough so that even my husband agrees it makes a great meal!
- Side Dish:
- Pesto Roasted Vegetables – These are fast and oh, so delicious. You can eat them on the side, or get a little crazy and mix them right in to the salad.
- Garlic Bread- We like angel hair or penne pasta
TUESDAY
- Main Dish: Beef Enchilada Skillet- This marinade is a family favorite and can be made on the grill, or in a skillet.
- Side Dish:
- Tortillas – keep it classic by rolling this up in a tortilla
- Cauliflower Rice – If you are going low carb, place a big scoop on top of a bed of cauliflower rice.
WEDNESDAY
- Main Dish: Chicken with Creamy Mushroom Sauce– This recipe is FAST and DELICIOUS! If you love mushrooms, you can’t miss this one!!
- Side Dish:
- Mashed Potatoes– This recipe is super simple and extra creamy
- Baked Asparagus– The classic way. Simple and delicious!
THURSDAY
- Main Dish: Baked Sausage and Peppers – Like the classic, but so much easier! This recipe is made all in one dish and bakes hands off in the oven for a meal that is delicious, and low prep.
- Sides:
- Hoagie rolls– or for a special treat, try toasting them with butter and garlic salt before piling on the sausage!
- Italian House Salad with Balsamic Vinaigrette– This is quick, easy, and healthy and is the perfect compliment to the flavors in the dish.
- Sides:
FRIDAY
- Main Dish: Sausage and Peppers Casserole– Chop sausage in bite sized pieces. Mix sausage peppers and onions with cooked rice in a 1:1 ratio (equal parts.) Place in a casserole dish and cover with mozzarella cheese. Bake at 350˚F for 25-30 minutes or until heated though.
- Side:
- Roasted veggies – These are easy and can cook in the oven with the casserole!
- Pesto Cheese Bread– These flavors are so good with the casserole!.
- Side:
- Dessert – Personal Smores Parfaits- This no bake dessert is always a huge hit at our house.
APPETIZER
- Party Meatballs- Couldn’t be easier and always a crowd pleaser! (This also makes a great “Grazing” style lunch!
