Family Meal Plan
MONDAY
- Main Dish: – Chicken Pomodoro– Quick and easy but feels kinda fancy. This dinner is filled with tender chicken smothered in a tender roasted garlicky tomato sauce… all made in about 20 minutes!
- Side Dish:
- Garlic Bread – This is fast and oh, so delicious.
- Crispy Brussels Sprouts– I can’t get enough of the crispy edges on these!
TUESDAY
- Main Dish: LOADED Beef Enchilada Soup– Made with ground beef, tomatoes, corn, black beans and a velvety enchilada broth, this one pot soup has been on repeat at our house!
- Side Dish:
- Side salad – Top it with this amazing jalapeno ranch dressing
- Mexican Rice – Serve it on the side, or mix it into your soup.
WEDNESDAY
- Main Dish: Chicken Florentine Casserole– Chicken and spinach combine in a creamy delicious sauce and bake to perfection! To make it extra easy, you can use a rotisserie chicken (my favorite!)
- Side Dish:
- Tomato Basil Mozzarella Salad– This recipe is super simple, fresh, and of course, delicious!
- Garlic Parmesan Roasted Broccoli– My kids never complain about eating this broccoli!
THURSDAY
- Main Dish: Big Mac Skillet – Comfort food without the guilt! This dish gives you all the flavor of a Big Mac, but made in a skillet at home in minutes. You can eat it as a salad (like me!) or on a bun (like my kids) so it is customizable for each person.
- Sides:
- Garlic Smashed Potatoes– Get the flavor of french fries in these oven baked potatoes!
- Cajun Vegetables– These are great to pack in the flavor and get your veggies in! They do have a little kick to make them extra delicious!
- Sides:
FRIDAY
- Main Dish: Monterey Chicken– Tender Chicken layered with BBQ sauce, bacon and cheese…. Hope you weren’t planning on left overs! This is so good, it usually gets devoured no matter how much I make!
- Side:
- Skillet Green Beans – Quick and classic!
- Hashbrown Casserole– This Cracker Barrel Copycat is our kids favorite!
- Side:
- Dessert – No Bake Cookies– My favorite for when I am really craving chocolate!
APPETIZER
- LOADED Taco Dip– This is so hearty that it can substitute for a meal!
