There is something so fulfilling about a sheet-pan dinner. They are so easy, but they bring the family together in a way that is unique to one-pan meals. We are always in a rush at dinner time so we have lots of favorite one pan meals like our sheet pan chicken fajitas, sheet pan pineapple chicken, and sheet pan meatloaf.
This one-pan sausage and veggies dinner is everything you love about an easy sheet pan meal, and the flavor goes right over the top by roasting the smoked sausage, potatoes and all the veggies in an irresistible (and quick to make) cajun butter sauce!

Ingredients + Substitutions
Sheet Pan:
- Smoked Sausage – I use a traditional smoked sausage because it really compliments the cajun flavor and makes this smoked sausage sheet pan dinner incredibly simple. But any neutral-flavored or spicy sausage would work if you want to kick up the heat a little.
- Yukon Potatoes – Feel free to use any type of potato you have on hand, just make sure the pieces are cut small enough to cook evenly with the other vegetables. I recommend making sure they are 1/2 inch or less so that they can fully cook through and you don’t end up with crunchy potatoes.
- Green Beans – Fresh is best, but you can use frozen also without needing to thaw them.
- Yellow Bell Pepper – I love to use yellow peppers for added sweetness, but any type of bell pepper will work.
- Purple Onion – Purple onions are my favorite because they have a slight tang and are bright in color! But, any type of onion can be used.
Butter Sauce
- Butter – Olive oil can be used if you want to make this recipe dairy free, but I highly recommend butter for the flavor! I keep salted butter on hand so that is what I use, but unsalted can work too since the cajun seasoning has additional salt in it.
- Parsley – Fresh parsley gives the whole dish a bight, fresh flavor.
- Cajun Seasoning – Try using my homemade cajun seasoning, this is especially great if you need to work with dietary needs, as it is gluten-free, dairy free, and without any additives! If not using homemade, any store-bought cajun seasoning you prefer will work. Just make sure you like the flavor because it will have a big impact on the end dish.
Recipe Step by Step
Slice the smoked sausage into half inch rounds and place them on the baking sheet.
Add the bell pepper, green beans, and potatoes.
Prepare the cajun butter sauce by combining the seasonings with melted butter.
Toss the sausage and vegetables with the cajun butter sauce and then roast the sheet pan dinner until cooked through.
Recipe Tips
- Keep the potatoes small – While any type of potatoes can be used, they need to be diced into 1″ pieces to ensure they cook at the same speed as the other ingredients. If the potatoes are too big, the other ingredients will be mushy or the potatoes will not be cooked through.
- Mix it up – While I like to use onions, bell peppers, and green beans, feel free to use any veggies you like for this sausage and veggie sheet pan dinner. You can try carrots, squash, broccoli, cauliflower, etc. The sky’s the limit!
- Give it space – Make sure to leave enough space around each sliced ingredient on the pan to allow air to circulate. If the ingredients are crowded, they will not cook as quickly. For this sausage and veggies sheet pan meal, I use a large sheet pan, but if you have a small one you make it work by cooking in two batches or with two pans.
- Add the butter last – to save on clean up, I like to add all of the veggies and meat to the sheet pan, then pour the butter mixture over this (in the pan), and then mix directly in the pan. If you are after a more even coat, however, you can mix everything in a large bowl before transferring it to the pan. This will add another bowl to wash though.
- Scale it – If you want to make more or less of this recipe, simply half, double, or even triple the ingredients. If lowering the ingredients, you can use the same size pan or a smaller one, if upping the ingredients you will need another pan or will need to cook in batches.
Recipe Short Cuts
If you need to make this sausage sheet pan recipe but are extra short on time, here are a few ideas that can help make this recipe even faster!
- Prep the veggies– All the veggies and the potatoes for sausage sheet pan dinners can be diced and stored up to a day in advance. That is why sheet pan dinners are so great!
- Prepare the seasoning and sauce– The seasoning, if homemade, can also be made months in advance. And the butter sauce can be made and stored in the fridge for up to 2 days prior. The butter will solidify in the fridge, but simply microwave the mixture before using to pour over the filling ingredients.
- Prepare as a freezer meal– You can have this meal prepped and ready to cook up to 6 months in advance using the freezer method. Find all the details on this below.
Recipe Variations

- Spicy Sausage and Veggies– For an extra kick, try using spicy sausage or Cajun sausage
- Loaded Sheet Pan Sausage and Veggies– For more vegetable variety, try adding more fresh produce, like squash, zucchini, or mushrooms. With adding more vegetables, you may need to use another pan to ensure the ingredients are not crowded.
Freezer Meal Instructions
Making this sausage and veggies sheet pan recipe into a freezer meal is simple! Follow the steps below and you can store this recipe in the freezer for up to 6 months.
- Slice the meat, onions, and peppers.
- Mix the meat, butter, and seasonings. Then package in a freezer bag or other freezer-friendly container.
- Place the peppers and onions in a separate zip-top bag or freezer-friendly container.
- FREEZE.
- Once you are ready to cook, thaw in the refrigerator for 24-48 hours.
- Then transfer the meat and veggies to a sheet pan and bake in the oven as directed.

Even though this dish is a one-pan meal with classic cajun flavors, you can bulk up the meal to stretch it even further by adding some other side dishes to go with it. Here are some simple ideas to round out your meal:

If you have leftovers after making this cajun sheet pan dinner with sausage, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.
To save leftovers, separate them into meal-sized portions and then place in an airtight container and store:
- in the refrigerator for 3-4 days
- in the freezer up to a month

Here are a few ways to repurpose those leftovers and give them a delicious makeover!
- Cajun Roasted Veggie Salad– Add a scoop of roasted vegetables and sausage on top of a bed of mixed greens. Add parmesan cheese and dress with ranch dressing or Italian dressing and add croutons.
- Cajun Roasted Vegetable Pasta– Make pasta as directed on the box. Drizzle with olive oil and toss with roasted vegetables, sausage, and parmesan cheese. Sprinkle extra seasoning if you want a stronger flavor. Alternately, you can make this homemade alfredo sauce and toss the pasta and veggies with it.
- Cajun Roasted Panini– Butter the outside of two slices of french bread. Mix a tablespoon of mayonnaise with 1/4 tsp cajun seasoning. On the inside, spread each slice with cajun mayo. Add cajun veggies and meat, omit the potatoes, mozzarella cheese, and grilled chicken (optional) then press in a panini press until golden on each side. You can also grill on medium heat in a skillet on each side until golden.

Sheet Pan Sausage & Veggies with Cajun Butter Sauce
Ingredients
- 1 pound smoked sausage, cut into 1/2-3/4 inch slices
- 3-4 Yukon gold potatoes, cut into 1 inch chunks
- 4 ounces Green beans
- 1 yellow bell pepper, cut into 1 inch pieces
- 1/2 Purple onion, roughly chopped
For the Cajun Butter Sauce
- 1/4 cup butter, melted
- 2 tablespoon chopped fresh parsley, plus more for garnish
- 1.5 teaspoons cajun seasoning
Instructions
- Preheat the oven to 400˚F.
- Mix to combine the melted butter, parsley and cajun seasoning.
- Spread the sausage, potatoes, green beans, onion, and bell peppers in a single layer on a large sheet pan (or 2 smaller ones.)
- Drizzle the butter sauce over the sausage and vegetables and toss to coat them on all sides.
- Bake for 20-25 minutes or until the potatoes are fork tender. Garnish with additional fresh parsley and serve immediately. Enjoy!
