Sheet Pan Sausage & Veggies with Cajun Butter Sauce
This quick and easy sheet pan dinner loads in the flavor with smoked sausage, a medley of fresh vegetables and a rich cajun butter sauce!

Ingredients

pound
smoked sausage
cut into 1/2-3/4 inch slices

Yukon gold potatoes
cut into 1 inch chunks

Green beans

yellow bell pepper
cut into 1 inch pieces

roughly chopped
For the Cajun Butter Sauce
1/4
cup
butter
melted
2
tablespoon
chopped fresh parsley
plus more for garnish

teaspoons
cajun seasoning
Instructions
Preheat the oven to 400˚F.
Mix to combine the melted butter, parsley and cajun seasoning.
Spread the sausage, potatoes, green beans, onion, and bell peppers in a single layer on a large sheet pan (or 2 smaller ones.)
Drizzle the butter sauce over the sausage and vegetables and toss to coat them on all sides.
Bake for 20-25 minutes or until the potatoes are fork tender. Garnish with additional fresh parsley and serve immediately. Enjoy!
Notes
To freeze:
Place sliced sausage, vegetables and potatoes in a freezer bag. Once ready to cook, thaw, and toss in butter sauce, then bake as directed.
