Delicious Antipasto Salad
I was always afraid to order antipasto salad because I never really knew what it was. Once I did I realized how delicious it was and I had to recreate it for my own house.
One thing I love about antipasto salad is how you can eat it throughout the week for meal prep lunches. This salad is also fabulous because my kids love it too. That’s always a win in my book.
Antipasto salad is perfect for a summer barbecue or dinner by the pool. This salad is so fresh and full of Italian flavors.
What is Antipasto
Antipasto means before food in Italian and consists of small appetizers served before your meal. These include small cured meats like salami or pepperoni, cheeses, and marinated vegetables like olives and artichoke hearts. Put all these together and you have a delicious salad.

You can use either dressing on your salad. I prefer creamy Italian but any dressing you find at the store will work just fine.
How to store leftovers for Antipasto Salad
Since this salad is more hearty than green salads it can be saved and eaten after the initial serving. To store salad, place the leftovers in an airtight container and place in the refrigerator for 1-3 days. Before serving, toss the salad well to redistribute dressing. Antipasto salad cannot be frozen.

Ingredients
- 8 oz Pepperoni slices, quartered
- 8 oz Genoa salami, diced
- 1 jar, 16 oz Peperonchini peppers, drained and roughly chopped
- 8 oz Mozzarella, cubed
- 1 jar, 9.5 oz Kalamata olives, drained
- 1 pint cherry tomatoes, halved
- 1/2 cup Italian Dressing
