Cucumber Tomato Salad Recipe
During the week I make an effort to try and eat salads as much as possible. I’m always trying to switch up my salads because I can get pretty tired of them. That’s when I rely on inspiration for new recipes.
This recipe came about because of my love for fresh and delicious flavors from the garden. I was walking through the produce isle when inspiration came to me for this salad. The flavors in this salad are the perfect blend of salty and sweet. The dressing for this salad is a perfect marriage to bring the salad together.

This salad comes together super quick. The hardest part is chopping up the vegetables. But since this salad only has 3 vegetables it should be super quick. Simply cut up your tomatoes, cucumber and dice your onion. Mix up the ingredients for the dressing in a separate bowl and drizzle over top. Mix well and enjoy!
Is this recipe gluten free?
YES! This recipe is naturally gluten free, just make sure you check all your labels before you use the items.
Can I use other tomatoes?
Yes, you could use cherry tomatoes or any other tomatoes you desire. I just like the taste of Roma tomatoes and so that’s what I prefer.
How long can I keep this salad in the refrigerator?
You can keep this salad in the refrigerator in an airtight container for up to 2-3 days. I feel like this salad is even better the second day because the flavors have marinated a little.
