Family Meal Plan
MONDAY
- Main Dish: – Blackened Chicken– This method for tender, juicy chicken breast is a huge hit at my house. I actually like to make double so we have leftovers for wraps and salads for lunch through the week. There is tons of flavor in this and it only takes a little over 10 min to make!
- Side Dish:
- Cajun Roasted veggies – This are great and so easy, or if you want a more classic recipe try my garlic roasted vegetables.
- Garlic Smashed Potatoes– This are so easy, and one of the most delicious sides on my website!
TUESDAY
- Main Dish: 10 min Easy Beef Fajitas– This recipe is packed with flavor and super quick and easy to make. These Tex-Mex style steak fajitas are flexible to serve traditionally in tortillas, over salad, or just about any way your family likes.
- Side Dish:
- Set up- The traditional set up for Tex-Mex fajitas is tortillas, shredded lettuce, pico de gallo, sour cream, and guacamole.
- Rice & Beans– We like this Mexican rice and Refried Beans.
WEDNESDAY
- Main Dish: – Creamy Artichoke Chicken Bake– This one dish meal is super creamy and comforting, plus it bakes hands off – no babysitting required.
- Side Dish:
- Garlic Bread– This is our favorite recipe- the secret is in the spread.
- Crispy Roasted Brussels Sprouts– My favorite is the garlic version for this dinner!!
THURSDAY
- Main Dish: Crock Pot Tomato Basil Soup – It doesn’t get much easier than this soup! This is one of my oldest and most made recipes. It is amazing how delicious this soup is using just a few ingredients.
- Sides:
- Cheesy Garlic Bread– Perfect for dipping. My kids always ask for seconds!
- Sides:
FRIDAY
- Main Dish: Steak Fajita Nachos– Spread layer of tortilla chips on a baking sheet. Chop leftover fajitas into bite sized pieces and sprinkle the meat, peppers and onions over the chips. Add corn and beans if desired. Then top with shredded cheddar or mexi blend cheese. Bake at 425˚F for 8-12 minutes or until cheese is melted.
- Side:
- Homemade Salsa– Try my easy blender salsa you can make in minutes!
- Jalapeno Ranch– I am not kidding when I tell you my kids can’t live without this stuff!
- Side:
- Dessert – Cookies n Cream Parfait– These are perfect for the new because you can make them as indulgent or light as you want. To lighten it up just use fat free/sugar free pudding and sugar free cool whip!
APPETIZER
- Mexican Spinach Dip– Oh goodness! When I thought of what to share that is perfect for watching the game, this was my #1 choice!! It is creamy, cheesy, delicious, and made hearty with lots of spinach, tomatoes and green chiles.
