I love a dinner that gives you the whole meal on one pan, and this one really delivers. The flank steak marinates while the potatoes get a head start in the oven, then the green beans and mushrooms join in so everything finishes cooking together. You end up with juicy steak, crispy potatoes, and perfectly roasted vegetables without a pile of dishes waiting in the sink.

This is also a great recipe when you want a dinner that feels a little more special without making a big production out of it. The marinade gives the steak tons of flavor, and the combination of steak and roasted vegetables makes this a complete meal that’s easy enough for a weeknight.

This Sheet Pan Steak and Veggies recipe is as simple as promised! Just a one pan and under 30 minutes for a family friendly dinner.

In this section I am going to go through a few tips and tricks I use for how to make Flank Steak in the Oven with veggies to get the absolute best and most delicious results.

Ingredients + Substitutions

  • Flank Steak – I like to use flank steak for this recipe, but if you prefer other cuts of steak, you can use ribeye, New York strip, or sirloin. Keep in mind that different cuts of steak will cook at different rates.
  • Marinade Base – Our marinade starts with a combination of olive oil, red wine vinegar, Worcestershire sauce, and honey.
  • Herbs and Spices – We’re bringing in plenty of flavor with garlic, fresh parsley, salt, black pepper, and dried thyme. If you want to add even more flavor, try it with a sprinkle of Italian seasoning, oregano, or even rosemary.
  • Sides – Rounding out our meal is a blend of baby creamer potatoes, green beans, and baby bella mushrooms.
  • Olive Oil & Garlic Salt – For roasting the veggies!

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Use other veggies – I love the potatoes, green beans, and mushrooms combination, but you can totally get creative with whatever veggies you love or have on hand! Try this recipe using asparagus, cherry tomatoes. sweet potatoes, bell pepper, broccoli, cauliflower, carrots, Brussels sprouts, onion, you name it.
  • Make it cheesy – Top your sheet pan meal off with a generous layer of parmesan cheese for a salty finish.
  • Spice it up – Give your meal a kick of heat by adding red pepper flakes or cayenne pepper to the marinade or to the veggie mix (or both!)

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make a Steak Sheet Pan Dinner.

Heat oven, then combine your marinade ingredients in a ziplock bag or large container, add in the steak, and marinate while you prep the veggies. Once marinated, add the steak to a large sheet pan.

Slice/chop your veggies as needed, then spread the baby potatoes out in a single layer next to the steak.

Add your green beans and mushrooms to the pan, then drizzle the veggies with olive oil and top with garlic salt.

Place the sheet pan in the oven and bake until the steak is cooked to your desired doneness. See the recipe card below for rare-well-done cooking time. Serve and enjoy!

Recipe Tips

  1. Cut the veggies evenly in size – Since everything is being cooked in one pan, it’s key that they all get done cooking at the same time. Chop your veggies accordingly!
  2. Adjust the cooking time for desired steak doneness – Whether you prefer rare, medium-rare, well-done, etc., you can adjust the cooking time to suit your tastes.
  3. Check the steak temperature – Since steak thickness and cooking time can vary, I recommend using a meat thermometer to be sure your steak is ready to serve before digging in.

Recipe Short Cuts

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Chop the veggies in advance – Get ahead by prepping your veggies a day ahead and storing them in the fridge.
  • Marinate your steak ahead of time – Save time later and give your steak a flavor boost? Heck yes. You can prepare the marinade and let the steak rest in the fridge overnight so it’s ready to go for baking when you are.

What to Serve with Flank Steak and Veggies

Since this protein based dinner is designed to include sides, you really can just serve it as-is. However, you can ABSOLUTELY whip up some other delicious sides to fill it in even more.

Choose one or several of these side dishes to create a wholesome, well-rounded dinner. There are both classic options and some healthy options to keep it light.

If you have leftovers after making this recipe, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days
  • in the freezer up to 3 months

Recipe FAQ’s

How long should you marinate flank steak?

That depends! You can keep this nice and quick and marinate the steak just while you prep your veggies. However, if you do want to marinate it a little bit longer and get ahead on your cooking, then you can prep it and marinate it overnight for some bonus flavor.

Ingredients 

For the steak

  • 2 pounds flank steak
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 2 tablespoons minced fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried thyme

For the sides

  • ¾ pound baby creamer potatoes, cut into quarters or eighths
  • 8 ounces green beans
  • 4 ounces sliced baby bella mushrooms
  • 1 tablespoon olive oil
  • 1 teaspoon garlic salt, (or more to taste)

Instructions 

For the steak

  • Preheat oven to 400˚F.
    Combine all ingredients in a gallon sized zip top bag, or large container. Mix.
  • Add flank steak and make sure that all sides of the flank steak are coated with the marinade.
    Chill while preparing the veggies.

For the sides

  • Cut potatoes into quarters or eighths, depending on the size of the potatoes. They should be very small bite-sized pieces.
    Spread the potatoes on ¼ of a large baking sheet.
  • Spread the green beans next to the potatoes, then top with the mushrooms.
    Drizzle all three with the olive oil and sprinkle with garlic salt.
  • Place the flank steak on the other half of the baking sheet.
    Cook sheet pan steak dinner as desired:
    – Rare: 10-12 minutes.
    – Medium-rare: 12-13 minutes
    -Medium: 14-15 minutes
    -Medium well: 16-17 minutes
    -Well done: 17-18 minutes
    Cooking times are approximate and will depend on thickness of your steak. Please use a meat thermometer to cook to desired doneness. Refer to doneness chart below.
  • Let rest 5-10 minutes. Garnish with additional chopped parsley and cut steak into thin slices against the grain to serve.

  • Medium Rare: 130–135°F – Warm red center
