Sheet pan recipes are some of my favorite recipes to create for my blog, and there’s a simple reason why: they’re also my favorite recipes to cook for weeknight meals! I love this sheet pan sausage and sweet potatoes recipe because the smoked sausage adds so much big flavor that you don’t need to add much else to make this meal delicious. This easy dinner recipe also has my go-to method for cooking kale: wiling it on a sheet pan. Cooking kale like this means some bits get crispy too, which my kids love!

Ingredients + Substitutions

- Smoked sausage – Other pre-cooked sausage varieties also work, so feel free to use what your family likes. Turkey or chicken sausage would also be great!
- Sweet potatoes – For a pop of color and sweet, earthy flavor. Be sure to cut these into evenly sized pieces so they all finish roasting at the same time.
- Onion – Onions soften and mellow in flavor when roasted, and the edges get crispy.
- Chopped kale – Remove the tough stems; even after roasting, they remain hard and unpleasant to eat!
- Olive oil – This helps the seasonings stick, keeps the veggies and sausage from sticking to the pan, and helps everything roast up golden and delicious.
- Italian seasoning – I love seasoning blends because they let me add a bunch of different flavors with just a single jar!
- Salt and black pepper – I like to use freshly ground pepper, which is more flavorful than finely ground store-bought black pepper.
- Garlic powder – This adds a nice savory flavor without the sharpness of fresh garlic.
- Parmesan – Freshly grated Parmesan melts over the veggies and sausage, adding umami, nutty flavor.
Make sure to see the recipe card at the bottom of this post for the full quantities and ingredients list.
Recipe Variations
If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!
- Sheet Pan Sausage and Potatoes – Instead of sweet potatoes, swap in Yukon Gold or red potatoes.
- Sheet Pan Sausage and Winter Squash – Lower the carb count and use butternut, acorn, or another winter squash in place of the sweet potatoes.
- Sheet Pan Sausage, Sweet Potatoes, and Apples – Add some cozy fall flavor by tossing in diced apples.
- Sheet Pan Sausage, Sweet Potatoes, and Brussels Sprouts – Replace the kale with shaved Brussels sprouts. Drizzle with maple syrup or Balsamic vinegar for a little sweetness to balance the Brussels sprout flavor. (Broccoli or cauliflower would also work, but those will have to be added at the beginning of the recipe.)
Recipe Step by Step
I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make sheet pan sausage and sweet potatoes.

Add the sausage, sweet potatoes, and onion to a sheet pan.

Add the olive oil and seasonings, then toss to coat.

Bake for 15 minutes.

Add the kale and bake 4 to 6 minutes more, or until it wilts.
Recipe Tips
- Cut the vegetables evenly – This is important anytime you’re cooking veggies, whether it’s roasting, sautéing, or grilling!
- Coat everything well with the oil – I like to use my hands, which I’ve found is the best way to really make sure every bite is coated. Pieces that aren’t coated will stick to the pan and won’t get golden and crisp.
- Don’t crowd the pan – Make sure everything is spaced out evenly for the best texture. When there’s room for the air to circulate, the edges of the veggies will get crispy.
Recipe Short Cuts
If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!
- Use bagged, pre-washed kale – This cuts down on a lot of the prep time!
- Buy grated Parmesan – It doesn’t melt over the sausage and sweet potatoes like freshly grated Parmesan does, but it still tastes good.
- Cut everything smaller – Smaller bites of sausage and vegetables will cook through faster.
