Ingredients + Substitutions

- Cooking Oil – Use any neutral cooking oil to brush over the sheet pan. This helps prevent any sticking for much easier cleanup!
- Potatoes O’Brien – I like to keep it super easy with a frozen mix of diced hash browns with peppers and onions (also known as potatoes o’brien!)
- Bacon – I recommend using thick-cut bacon so it cooks just right.

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!
- Make it vegetarian – Skip the bacon entirely or swap it out for a vegetarian bacon.

Brush oil over a large sheet pan, then spread the potatoes over the pan in a single layer.

Cut the bacon into small pieces, then layer that evenly over the top of the potatoes. Bake for 12 minutes.

Remove the pan from the oven, then crack the 6 eggs evenly over the top of the hash browns. Sprinkle cheese over top.

Bake for another 8-12 minutes or until the eggs are cooked and the cheese is melted, then serve and enjoy!

Sheet Pan Bacon Egg Breakfast Hash
Ingredients
- 1 tablespoon cooking oil
- 28 ounces frozen potatoes o brien, (diced hash browns with peppers and onions)
- 8 ounces bacon
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 6 eggs
- 1 cup cheddar cheese
Instructions
- Preheat the oven to 400˚F.
- Brush the oil over a large sheet pan. Spread the potatoes over the pan. Cut the bacon into small pieces, then sprinkle the bacon over the hash browns.
- Bake for 12 minutes. Then remove from the oven.Crack each egg and place one over the hash browns. I evenly space them over the pan putting one in each corner of pan and two in the middle. Sprinkle the cheese over the top.
- Return to the oven and bake for 8-12 more minutes or until the eggs are cooked to your preference.
