Boursin Cheese Mashed Potatoes – The EASY Way!
If you know, you know. The green box Boursin cheese is one of my favorite snacks, and a flavor all on it’s own. It has the perfect balance of a sharp garlic flavor, creamy cheese, and delicate herbs. You can often find me snacking on it with crackers or veggies, but it is also my secret weapon for making some incredibly delicious recipes.
This Boursin Mashed Potatoes recipe is one of them. By taking a favorite classic side dish and making it even better by infusing them with the incredible flavor of garlic herb Boursin cheese and parmesan.
This recipe is quick to make and pairs perfectly with a number of different entrees or side dishes.

Ingredients + Substitutions
- Potatoes – I usually use Yukon gold potatoes. They’re my favorite potatoes for mashing since their high starch content creates a super fluffy mashed potato texture. You can also use Russet or red potatoes, or even a combination.
- Boursin Cheese – We’re creating incredible flavor by adding Garlic Herb Boursin Cheese. Look for the green box at the store to make sure you’re getting the right variety of Boursin cheese.
- Butter
- Milk
- Parmesan – While pre-shredded will work, I definitely recommend shredding your own cheese for the best texture and the freshest flavor.
- Salt and Pepper
- Chopped Chives – For an optional garnish!
Recipe Tips
- Chop the potatoes into even 2-inch chunks – The smaller pieces cook more quickly! Be sure you’re chopping them evenly so they cook at the same rate. Over-cooked potatoes can result in less flavor since the potatoes are holding more water.
- Start with cold water – Starting the potatoes in a pot of cold water helps them come to temp more evenly which creates a fluffier texture. It also prevents you from having to drop chunks of potato into boiling water.
- Don’t over-mix – Over-mixed mashed potatoes can become gummy. Mix them just until everything is combined, then stop there.
- Play with texture – You can use a hand masher if you prefer more texture or use an electric mixer for a smoother consistency.
Recipe Short Cuts
If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!
- Cut the potatoes in advance – Chop the potatoes up into 2-inch chunks, then store them in the fridge for up to a day before cooking.
- Make it ahead of time – While there’s nothing quite like the texture of mashed potatoes served right away, you can definitely prep these in advance and store them in the fridge for 3-4 days.
Recipe Variations
If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!
- Use another cheese – The garlic herb Boursin cheese is delicious, but you can totally use another flavor variation of Boursin cheese or swap it out for another type of cheese entirely.
- Add some heat – Spice your mashed potatoes up with a sprinkle of cayenne pepper or red pepper flakes.
- Try other garnishes – Add a sprinkle of cooked and crumbled bacon, a dollop of your favorite pesto, or any of your favorite fresh herbs.
Boursin Mashed Potato Leftovers
If you have leftovers after making mashed potatoes with Boursin cheese, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.
To save leftovers, separate into meal sized portions and then place in an airtight container and store:
- in the refrigerator for 3-4 days
- I don’t find that these potatoes freeze well, so I recommend eating them within a few days of making them.

Boursin Mashed Potatoes
Ingredients
- 2.5 lbs yukon gold potatoes
- 5.2 ounces garlic herb boursin cheese
- 6 tablespoons butter, plus more for topping if desired
- 1/2 cup milk
- 1/2 cup parmesan
- 1 teaspoon salt
- 1 teaspoon pepper
Garnish (optional)
- chopped chives
Instructions
- Chop the potatoes into 2 inch cubes (see note.) Add the potatoes to a large pot and cover with water. Place the pot on the stove and bring to a simmer.
- Boil the potatoes for 14-18 minutes, until they are fork tender. Then drain the potatoes and return to the pot.
- Add Boursin, butter, milk, parmesan, salt and pepper and mash with a potato masher until they reach the desired consistency.OR, for a smooth consistency use an electric mixer on low until everything is just combined and the potatoes are smooth.
- Garnish the top with extra melted butter and chopped chives.
