Homemade Dinner Rolls – The EASY Way!

A good dinner roll has a way of just completing the meal. Whether it is to compliment the flavors, or soak up the extra sauce, they help to round out dinner making it extra filling and delicious.

This No Yeast Dinner Rolls recipe is PERFECT for even the busiest nights since it takes less than 30 minutes to make these from scratch. The rolls have a wonderfully soft texture and a rich buttery flavor that can’t be beat.

These have been on my mind awhile, and it took me several tries to get them just right. But I can tell you that with just the right amount of just the right ingredients, this recipe will not disappoint!

While they are a bit different in taste and texture than a traditional yeast dinner roll, this easy no yeast version is still buttery, soft and absolutely delicious!

What I LOVE about this recipe:

  • FAST- This is quite possibly the fastest homemade roll recipe of all time.
  • No mess- These only use one bowl and one baking sheet.
  • Everyday ingredients. Nothing special needed to make these, just a handful of everyday ingredients
  • Soft and Buttery- These rolls bake up big and soft with a rich buttery flavor!
  • Savable- These can be frozen and reheated for a fresh from the oven feel. More on that below!

What to Serve No Yeast Rolls with

Since this are quick and easy, they make the perfect compliment to many dinners that are just as fast. These go well with almost anything, but a few of my favorite dishes to make these No Yeast Rolls with.

Main Dish Ideas

  • Southwest Pork Chops
  • Slow Cooker 15 Bean Soup
  • Crispy Panko Chicken with Honey Drizzle
  • LOADED Chicken Salad
  • Chicken Cobb Salad
  • Crock Pot Broccoli Cheese Soup
  • Crock Pot Cranberry Chicken

These rolls have a bit of a biscuit type texture so they go well with many of the things you would serve a traditional roll or biscuit with.

Ingredients + Substitutions

Ingredients for making No Yeast Dinner Rolls including flour, yogurt, butter, baking soda, sugar, and salt
  • Plain yogurt– Feel free to use whole milk yogurt or plain yogurt, but do ensure that it is plain (not vanilla or other flavored.) The yogurt helps the rolls to develop the tender, fluffy texure we love!
  • Challenge salted butter– This is melted and incorporated into the roll for that rich buttery flavor! I have used Challenge butter for years because The taste is pure, and the flavor is consistent.

Challenge Butter has been a quality staple in kitchens since 1911. It’s churned daily from two natural ingredients: the freshest 100% real pasteurized sweet cream and salt. That’s it. Nothing artificial or synthetic.
  • Flour– Use all purpose flour when making the recipe as directed. If you prefer to substitute self rising flour, you can do so, but will need to omit the additional baking soda and salt in the recipe.
  • Baking soda
  • Sugar
  • Salt
  • Challenge Spreadable Butter with Canola Oil– This makes it easy to top the rolls with flavorful salted butter without having to use more dishes to melt butter or make a mess! This stuff is a staple in my kitchen!
Process photos for how to make dinner rolls without yeast. 1. combine butter and yogurt in a bowl. 2 Mix in dry ingredients to form dough. 3. Shape into balls on a baking sheet

Recipe Tips

  1. First combine the wet ingredients– I like to make sure the butter and yogurt are smooth before adding the dry ingredients.
  2. Only use one bowl – You can get away with doing less dishes by first melting the butter in the mixing bowl, then adding and combining it with the yogurt. Add the flour, baking powder, salt, and sugar to the bowl and mix and they are ready to bake with only using one bowl!
  3. Don’t over mix. In order to keep these no yeast rolls extra fluffy and tender, avoid over mixing. Just mix until the dough is completely combined. Unlike traditional yeast rolls, you will not want (or need) to knead the dough. This can actually make the rolls dense and tough.
  4. Bake- The rolls will bake at 375˚F for 16-18 minutes. They can cook quickly because they are not touching and able to cook from all sides. You want the center to be cooked through. Avoid over cooking to keep a light and tender roll. Over baked rolls will be more dry and crumbly.
  5. Brush tops with butter- This adds wonderful flavor to the rolls. Use the Challenge Spreadable Butter with canola oil to make it really easy. The spreadable butter can go right on top with no need to melt ahead of time, and because the butter is naturally soft and spreadable, it is easy to just get a little bit of butter without over-doing it. The flavor of the salt and butter it gives the tops of the rolls is a touch of perfection!

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Sweet Dinner Rolls with no yeast– To make this into a sweeter dinner roll, you can add up to 2 tablespoons of sugar to the dry ingredients to taste. This produces a soft, fluffy, no yeast roll with a sweeter taste.
  • Cheese Dinner Rolls with no yeast – This recipe can become a cheese dinner roll by adding one cup of shredded cheese in with the flour. I like to use cheddar, pepper jack, Mexican blend, or parmesan depending on what I am pairing it with to make cheese rolls.
  • Garlic Dinner Rolls with no yeast– 1 1 tsp crushed garlic in with the yogurt mixture, then make rolls as directed.

Freezer Instructions

These easy No Yeast Dinner Rolls are very freezer friendly. This makes a great short cut for serving these rolls on any busy weeknight!

  1. Prepare and bake rolls as directed. Do not brush butter over the top at the end.
  2. Allow to cool to room temperature.
  3. Package in a freezer bag or freezer friendly container.
  4. Freeze.
  5. When ready to serve, rolls can be thawed or heated from frozen by placing on a baking sheet and heated for 5-9 minutes in an oven set to 350˚F.
  6. Once they come out of the oven warm, brush the tops with Challenge Spreadable Butter with Canola Oil.

For the best flavor, this meal can be frozen for up to 6 months.

I’d like to try these for dinner tonight. Can I use unsalted butter? If so do I need to increase the salt in the recipe? Thank you!

Yes, you can use unsalted butter. I might add about 1/8-1/4 teaspoon extra salt to keep them flavorful. Let me know what you think!

This looks so delicious! Can almond flour be substituted to make it keto?

I haven’t tried it with almond flour and am not a gluten free baking expert, so I hesitate to give advice. Let me know if you try it though!
