Family Meal Plan
MONDAY
- Main Dish: – Green Chile Pork Chops– So good and SO quick! These pork chops are smothered in a creamy green chile sauce and baked to tender perfection.
- Side Dish:
- Cilantro Lime Rice – Great to soak up the extra sauce!
- Cajun Roasted veggies- these have a tiny kick, so if you like it mild you can season with taco seasoning instead.
TUESDAY
- Main Dish: Crock Pot Greek Style Chicken- Set it and forget it, this meal is full of flavor and the leftovers make great lunches!
- Side Dish:
- Salad – Add cucumber, tomato, feta cheese, and drizzle with balsamic vinaigrette (this one is FANTASTIC!)
- Mediterranean Chickpeas – This simple side can be made ahead and is a family favorite!
WEDNESDAY
- Main Dish: 7 Layer Taco Casserole– If you love seven layer dip, you will be a big fan of this dinner! Seven luscious layers of Mexican favorites, layered up into the perfect casserole! YUM!
- Side Dish:
- Mexican Roasted Veggies– This recipe is super simple and adds a great
- Tortillas- We like extra for scooping up all the goodness!
THURSDAY
- Main Dish: Slow Cooker 15 Bean Soup – This is the best comfort food! You can use leftover ham if you still have it in the fridge or freezer, or another meat. This soup cooks low and slow for an incredible amount of flavor and is PACKED with protein and fiber!
- Sides:
- Garlic Bread– Our favorite recipe!
- Side salad– If you want something extra, you can add a side salad. I like to pair this soup with salad topped with homemade ranch. It is quick to make and SO WORTH IT.

FRIDAY
- Main Dish: Greek Chicken Flatbreads– Make this with leftovers from Tuesday! Spread a flatbread (like naan) with a thin coat of olive oil and a smear of garlic. Top with a sprinkle of mozzarella and feta cheese then top with chopped leftover chicken and veggies. Bake at 425˚F for 8-12 minutes or until heated through.

- Dessert – Oatmeal Raisin Cookies- These cookies are so good! They regularly get 5 star reviews like this one from Krista “Love this recipe. Oatmeal raisin is my Hubby’s favorite. APPETIZER
- Pineapple Teriyaki Meatballs– These cook in the crock pot and can stay warm for a long time so they are perfect for football watching!
