Family Meal Plan
MONDAY
- Main Dish: – One Pan Greek Chicken– This one is SO DELICIOUS and only has 5 ingredients! Even if you aren’t familiar with Greek food, this is a must try for its flavor and ease!
- Side Dish:
- Cucumber Tomato Salad – Really good as is, or add a sprinkle of feta for a little extra!
- Garlic Mashed Potatoes– These classic potatoes are easy and go with everything!
TUESDAY
- Main Dish: Beef Enchilada Casserole– So much flavor all in one dish! Also it is made lighter by using zucchini (Your kids won’t even notice!) but you can sub tortillas if you prefer.
- Side Dish:
- Corn Salsa – This is just like the stuff they make at Chipotle! You can serve it on top, or on the side with chips
- Cilantro Lime Rice – Another Chipotle copycat to round out this meal.
WEDNESDAY
- Main Dish: Lasagna Stuffed Peppers– All of the delicious hearty flavors of lasagna stuffed in a pepper for the best twist on an old classic
- Side Dish:
- Italian House Salad– Serve a simple salad with this creamy Italian dressing for an over the top delicious side!
- Pesto Roasted Veggies– These make a great compliment to the meal and you won’t believe how DELICIOUS they are!
THURSDAY
- Main Dish: Loaded Chicken Pitas– Heat leftovers from Monday, then heat pita bread in a skillet or in the oven until warm. Spread a layer of tzatziki over the pita bread and pile the chicken on top. Add your choice of tomato, cucumber, olives, pepperoncini peppers, mixed greens, and feta cheese.
- Sides:
- Pita Chips – Serve it with hummus for dipping
- Mediterranean Chickpea Salad– This is an awesome side, and also the leftovers get even better as they sit, so it makes a great lunch the next day.
- Sides:
FRIDAY
- Main Dish: Creamy Swiss Chicken Casserole– Use the leftovers from Tuesday to start this easy Friday meal. Grab your favorite wrap and layer the chicken, lettuce, tomatoes, and drizzle with honey mustard.
- Side:
- Skillet green beans– these are simple and perfect for a quick, kid-friendly side dish.
- Cheesy garlic bread– The best. Seriously.
- Side:
- Dessert – Toffee Chocolate Chip Bars– These bars from my friend Lauren are incredible! These are definitely worth making this week!
APPETIZER
- Party Meatballs– Grab your crock pot and get these going for snacking on while you watch the game this weekend. This classic recipe is a game day staple for us!
