Family Meal Plan
MONDAY
- Main Dish: – Italian Chicken and Peppers– This dish is the dinner trifecta- EASY – HEALTHY – DELICIOUS! Packed with veggies and full of flavor, but still able to get from fridge to oven in as little as 10 min!
- Side Dish:
- Garlic Bread – so perfect to soak up all the sauce!
- Side salad- top it with this creamy Italian dressing for mega delicious flavor blast!!
TUESDAY
- Main Dish: Mexican Beef and Rice Skillet– This dinner has everything delicious in just one skillet! The best way to use up that ground beef in your fridge, it is one that everyone asks for seconds of in our house.
- Side Dish:
- Chips and Salsa
- Guacamole + Sour cream for toppping
WEDNESDAY
- Main Dish: Cheesy Meatballs Parmesan– You may have seen me making this on my Instagram stories this week! I forgot how quick, easy, and delicious this meal is. The kids love it every bit as much as the grown ups. **Save the leftovers for an easy meal on Friday!
- Side Dish:
- Pasta (or to lighten it up, use spaghetti squash or zoodles)
- Oven Roasted Veggies – Can’t beat this recipe! So quick and simple!
THURSDAY
- Main Dish: Cajun Chicken Alfredo with Zoodles– This recipe is KILLER on flavor and can be made in 30 minutes. It is rich and creamy, but lightened up by using zoodles instead of pasta. If you have kiddos eating with you, you can easily do a combo of zoodles and pasta to suit everyone’s palette.
- Side Dish:
- Roasted Cauliflower
FRIDAY
- Main Dish: Meatball Subs- Use up the leftovers of your Meatballs parmesan with this family pleasing meal. Use sub rolls, or to make it super fun, I like to use one big loaf of french bread. Cut almost in half and then spread butter on each side. Sprinkle with salt, garlic powder, and Italian seasoning. Toast in the oven at 400˚F until edges start to brown and butter is melted and toasty. Pile on the meatballs and add extra cheese. Bake again until everything is heated and the cheese is melted. Cut into servings and eat immediately!
- Side:
- Veggies and dip– try it with my homemade ranch dressing. YUM!
- Chips
- Side:
- Dessert – Peanut Butter Swirl Bars– If you need a dessert, this is IT! These bars are one of our all time favorites. Made from scratch, you will be surprised just how quick and easy they are to make.
APPETIZER
- Green Chile Dip – This has allllll my favorites in it! This creamy dip is loaded with green chiles and cheddar and baked to perfection for one of my favorite party table appetizers!
