Family Meal Plan
MONDAY
- Main Dish: – Ranch Chicken Bites– We are starting off the year with one of my favorite light and healthy meals! These Ranch Chicken Bites are gluten free, low carb, dairy free, high protein and low fat… and did I mention SO DELICIOUS?! The kids eat them like chicken nuggets with their favorite dipping sauce and I love to eat them over sautéed spinach or salad greens myself.
- Side Dish:
- Sautéed Garlic Spinach – I serve the chicken right on top of this!
- Broccoli Cauliflower Salad– this is a great side and doubles as a great lunch the next day if you have extras!!
TUESDAY
- Main Dish: Cheesy Taco Skillet– Perfect for if you are going low carb, or just love delicious food! This cheesy taco skillet has all the delicious flavor of extra cheesy tacos — minus the carbs!
- Side Dish:
- Healthy Salsa and veggie chips
- Guacamole
WEDNESDAY
- Main Dish: Baked Chicken Cacciatore– This veggie packed Italian Classic is made in just one dish! Instead of the traditional skillet version that takes careful attendance, this recipe is hands off and just as delicious!
- Side Dish:
- Tomato Mozzarella Salad
- Garlic Bread – Can’t beat this recipe!
THURSDAY
- Main Dish: Mediterranean Chickpea Salad with chicken– Use the leftovers from Monday to make this super delicious protein packed meal! Just make salad as directed and add leftover chicken bites to the top! If you are out of ranch chicken, just grab a rotisserie chicken from the store or grill up some chicken on the grill.
- Side Dish:
- Pita Chips
FRIDAY
- Main Dish: Loaded Cauliflower Soup– Perfect for a cold winter day, this soup is one of the most popular on my site! It has even converted those who don’t love cauliflower into believers! Low carb, super creamy, and loaded with all the good stuff, this will put smiles on everyone’s faces!
- Side:
- Side Salad– try it with my creamy Italian dressing. YUM!
- Side:
- Dessert – Peanut Butter Energy Balls– This is a great way to get something healthy and something sweet in one! Packed with wholesome oats, peanut butter and honey. These are a great easy snack with a satisfying amount of sweet.
APPETIZER
- Layered Greek Dip – One of my all time favorites and super healthy to boot! This greek dip is a winner all around!
