Family Meal Plan
MONDAY
- Main Dish: – Italian Stuffed Peppers– This simple dinner is family friendly and hits the spot. Plus leftovers are great to reheat for lunch throughout the week!
- Side Dish:
- Italian Tortellini Salad – big hit with my kids!
- Baked Asparagus
TUESDAY
- Main Dish: Southwest Chicken Casserole– One dish and TONS of flavor! Eat it with Mexican rice, cauliflower rice, or just on it’s own with a fork and knife!
- Side Dish:
- Mexican Rice
- Salsa, Guac & Sour cream
WEDNESDAY
- Main Dish: Crock Pot Chicken Chili– The crock pot makes this award winning chili too easy! … or I have an Instant Pot version too!
- Side Dish:
- Mexican Cornbread– This is our go-to recipe!
- Sour Cream, chopped cilantro, fresh avocado
THURSDAY
- Main Dish: Southwest Chicken Nachos– Use the leftovers from the southwest chicken to make these loaded southwest nachos. If you don’t have leftovers, just follow this recipe as directed.
Nachos may sound iffy for a healthy dinner, but my kids eat so many more veggies than on a normal night when I load them in nachos! - Side Dish:
FRIDAY
- Main Dish: Zesty Crock Pot Pulled Pork– Let’s celebrate Friday with some BBQ! This recipe is simple and makes enough to feed a crowd so call your friends and make it a night!
- Side:
- Dessert – Cookies n Cream Parfait– this recipe is an oldie but goodie! So simple, no bake, and the looks will impress!
