Family Meal Plan
MONDAY
- Main Dish: – Southern Pot Roast with Potatoes– I love making a big roast like this at the beginning of the week! You can eat it for dinner night one, then use the ample leftovers for meal prep or extra quick prep meals later in the week.
- Side Dish:
- Salad with buttermilk Ranch– This homemade dressing takes 5 minutes and just might be life changing it is so good. It stays good in the fridge for a week + and is totally worth those few extra minutes.
TUESDAY
- Main Dish: Sheet Pan Sausage and Veggies with Cajun Butter Sauce– This one pan meal is a great way to get protein and veggies all in one shot AND avoid dishes! If your kids are sensitive to spice, you may want to leave the cajun butter sauce off of a portion of the pan. You don’t need tons of sides with this meal, but if you like to stretch your meals like I do, these are great pairings and make it super kid-friendly!
- Side Dish:
- Rice– My pick is jasmine, but long grain white or brown will work too. You can also sub a cauliflower rice to keep the dish lighter.
- Garlic Cheese Bread– you can’t beat cheesy garlic bread! And this recipe is our personal favorite.
WEDNESDAY
- Main Dish: Chicken Enchilada Casserole– This recipe has been a HUGE hit! It couldn’t be easier and it locks in those flavors with just a handful of ingredients. At best, this could take 5 minutes to throw together and at worst maybe 15… It seems almost wrong a dinner so delicious can be so easy!
- Side Dish:
- “Doctored” Canned Beans– This is the easiest way to make canned beans taste like you slaved hours!
- Veggies with Jalapeno Ranch– This isn’t very spicy (or use the modification to eliminate spice) and it is my secret weapon to getting my kids to eat so many veggies!!.
THURSDAY
- Main Dish: BBQ Pork Sandwiches – This is super easy slow cooker recipe will keep the house cool and make a great summer meal! Make it sandwiches or keep it light as a lettuce wrap or salad.
- Sides:
- Corn on the Cob with Garlic Butter– The garlic butter on this corn is EVERYTHING!
- Roasted Vegetables– My go to side dish.
FRIDAY
- Main dish: Chicken Pomodoro– Sounds fancy, but it is SO easy! This is basically pan seared chicken in a homemade ultra fast tomato sauce. It really just sings with flavor and is perfect for those busy nights where you need something healthy that no one will complain about!
- Side:
- Garlic Bread– My go-to recipe for the best garlic bread.
- Parmesan Broccoli– The very best way to eat broccoli!!
- Dessert – Double Chocolate Chip Cookies– These cookies have been a favorite since I was a little kid! Never enough chocolate as far as I am concerned. This recipe makes a super thick and fudgy dense chocolate chip cookie.
APPETIZER
- 2 ingredient Pesto Snacks– This is a collection of my favorite pesto combos! These make great snacks or appetizers and can be whipped up in just minutes!
