Family Meal Plan
MONDAY
- Main Dish: – Feta Chicken Bake– This one dish meal kills it on a busy night. Packed with flavor, the delicious tomato feta topping bakes in the flavor as it cooks. Best part, with only one dish, you have very little clean up!
- Side Dish:
- Garlic Smashed Potatoes– This easy rice is our go-to side… it tastes just like Chipotle!
- Roasted Asparagus– This is simple, healthy, delicious and can bake right alongside the chicken in the oven.
TUESDAY
- Main Dish: Sheet Pan Chicken Fajitas– This is the quickest and easiest way to make fajitas! It turns out so delicious I actually like to make extras and pile it on salad for lunch through the week.
- Side Dish:
- Mexican Rice– These taste just like a Mexican restaurant!
- Refried Beans- Quick and easy, plus you can freeze extras for an easy meal later.
WEDNESDAY
- Main Dish: Steak Fried Rice– This is always a favorite of pretty much anyone who tries it! This recipe is quick and easy, but soooooo good! As a bonus it is extra family friendly too.
- Side Dish:
- Yum Yum Sauce– my kids have to have this sauce on the fried rice! It is not even optional to them!
- Sriracha Slaw– For the grown ups this makes the best side/salad to add to the meal. It has so much flavor and is just so good (but does have a kick!)
THURSDAY
- Main Dish: Chicken Fajita Nachos – My kids all time favorite dinner! I make this super quick meal with the leftovers from the sheet pan fajitas, and although yes the kids are eating nachos, we sure do cram in a lot of extra veggies between those chips and the cheese!
- Sides:
- Guacamole – This is a tableside version that is so delicious!
- Corn Salsa– One of my absolute favorite toppings for nachos.
FRIDAY
- Main dish: French Onion Meatballs– These get RAVE reviews and are just the best dinner. With big beefy meatballs, sweet caramelized onions, and a rich cheesy topping, it is just had not to be totally wowed by the flavor in this recipe.
- Side:
- Side Salad with Balsamic Vinaigrette– Take the extra 5 minutes to make the salad dressing. Trust me, it is so worth it!
- Garlic Parmesan Broccoli– My kids favorite way to eat broccoli… and mine too!
- Side:
- Dessert – Peanut Butter Swirl Bars– This classic recipe has the coolest method to make bakery quality chocolate swirls in the bars, and it only takes a few ingredients to make from scratch.
APPETIZER
- Mexican Spinach Dip– This creamy dip has spinach mixed with all your favorite Mexican style flavors! Be warned, it is hard to stop eating!
