Family Meal Plan
MONDAY
- Main Dish: – Pineapple Salsa Chicken– This is one of my all time favorites. It is not only quick and easy, but SO DELICIOUS and perfect for keeping it light and healthy without sacrificing flavor. You are going to LOVE it!! My favorite way to serve it is with rice and beans, but you can get creative if you want.
- Side Dish:
- Cilantro Lime Rice – The flavors in here work so well with the chicken, but you can just use plain rice if you are in a pinch.
- Black Beans– You can do black beans from scratch, or just doctor up some canned black beans using this easy method to make them taste amazing!
TUESDAY
- Main Dish: Chicken Salsa Soup– This soup is dump and go and couldn’t be easier! It is always a home run with my kids and absolutely the perfect meal for a cold day.
- Side Dish:
- Cornbread- Try this buttermilk cornbread recipe, or this shortcut mexican cornbread recipe!
- Toppings– Pair it with guacamole, sour cream and shredded cheese
WEDNESDAY
- Main Dish: – Lasagna Stuffed Peppers– This easy meal brings all the flavor of lasagna into a super fast, wholesome and filling dinner. Packed with ground beef, luscious sauce and flavorful cheese, you can’t beat this for a weeknight meal.
- Side Dish:
- Side salad – Simple greens with my favorite lemon vinaigrette make this an incredibly delicious side.
- Quick Sauteed Green Beans– My favorite is the garlic version for this dinner!!
THURSDAY
- Main Dish: Slow Cooker 15 Bean Soup – This is a new year classic meal for us! It has lots of protein and fiber and great flavor from the ham and seasonings. Bonus- the leftovers only get better as the flavors enhance in the fridge.
- Sides:
- Cheesy Garlic Bread– Perfect for dipping. My kids always ask for seconds!
- Sides:
FRIDAY
- Main Dish: Asian Turkey Meatballs– There is so much flavor packed in these meatballs! With the asian flair and the sweet teriyaki style sauce, these are oh so good! I also love that the leftovers will carry us for lunches through the weekend.
- Side:
- Rice– White or brown- your choice!
- Sriracha Coleslaw– My favorite way to serve this is putting the meatballs and sauce on a bed of rice, adding the spicy slaw, then spooning the meatballs and sauce over the top. It tastes even better than take out!
- Side:
- Dessert – Peanut Butter Chocolate Energy Bites- These aren’t exactly a dessert, but they are a favorite for keeping in the fridge. My kids go for these anytime they want a snack, or a little sweet bite after a meal. They are protein and fiber packed for good measure!
APPETIZER
- Cajun Chicken Bites– This wholesome dish really shines on flavor, and it is perfect for watching football, or a movie night. Serve with toothpicks to make it easy to grab a few bites and go!
