Family Meal Plan
MONDAY
- Main Dish: – Bacon Cheeseburger Rice Skillet– Packed with family friendly flavors, this dish is a crowd pleaser, but the best part is that it can be ready in as little as 20 minutes!
- Side Dish:
- Ranch Smashed Potatoes – These are one of my favorite ways to make potatoes. They give you the french fry feel but are baked instead.
- Easy Oven Roasted Vegetables– This vegetable medley can be baked quick and easy for a delicious veggie rich side to serve with this meal.
TUESDAY
- Main Dish: Sheet Pan Chicken Fajitas– This one pan wonder meal is requested by my kids weekly. This is the easiest version of my tried and true chicken fajita recipe.
- Side Dish:
- Black Beans – Try these crock pot black beans. So much flavor and so easy!
- Toppings – Sour cream, corn salsa, cheddar cheese, guacamole and pico de gallo are our favorites!
WEDNESDAY
- Main Dish: Baked Feta Chicken– This is a protein packed way to try the viral Tiktok recipe that has been selling grocery stores out of ingredients.
- Side Dish:
- Mashed Potatoes– This recipe is super simple and extra creamy
- Sautéed Spinach– I like to serve the chicken right on top of a bed of spinach. The flavors go together so well and it makes for a super wholesome meal.
THURSDAY
- Main Dish: Creamy Beef and Mushroom Casserole – This casserole is super comforting and SUPER EASY! Perfect way to use up a pound of ground beef, this recipe gets great reviews from readers!
- Sides:
- Squash Casserole– a perfect southern favorite!
- Garlic cheese bread– easy and always a hit!
- Sides:
FRIDAY
- Main Dish: Chicken Fajita Nachos– Spread chips over a baking sheet sprinkle shredded cheese over the chips. Add rinsed and drained black beans and sweet corn and top with chopped chicken fajitas (and veggies) and more cheese. Bake at 425˚F for 10-15 minutes or until cheese is melted and nachos are heated through. Top with sour cream, guacamole and pico de gallo.

APPETIZER
- Cajun Chicken Dip– This is one of my husband’s all time favorite apps! It is creamy, packed with flavor, and made hearty with chopped chicken. Serve with yellow corn tortilla chips for an grazing appetizer that you can’t stop eating!
