When the weather starts to heat up and summer is in full swing, there are very few recipes that are really appealing to make.
There is every excuse in the book not to cook. It is too hot… We had a super hectic day… I didn’t make it to the store as planned…
The truth is, that I mostly am just in summer break mode and unless, it is super easy, and totally refreshing, it probably won’t get made until we fall back into routines as school starts.
One dish that can DEFINITELY be made even on the hottest and busiest of days is this Summer Fruit Salad recipe.
This Fruit Salad is made from sweet and delicious summer fruits and tossed with a simple dressing made from citrus and sweetened with Monk Fruit In The Raw to keep it light and delicious.
Monk Fruit In The Raw is a zero calorie sweetener that is made from a fruit found in Southeast Asia called Monk Fruit. It is a great way to cut sugars and lighten recipes and can be substituted cup for cup for sugar.

Tips for Making Summer Fruit Salad
This salad is simple as can be! I am always amazed at how special this easy fruit salad tastes, since it can be made so quickly.
I am going to share a few of my tips and tricks for making this fruit salad below, but make sure and hop down to the bottom of this post for the full recipe.
The Fruit
One of the best parts of this fruit salad is that you can make it with what you have on hand.
I have a basic list of the fruits I love to use in the fruit salad in the recipe card, but if you are missing one, or want to add a few other of your favorite fruits, it will work perfectly well, so feel free to substitute as much as you want.
The Fruit Salad Dressing
The magic in this salad really happens when it is tossed with the light and delicious citrus fruit salad dressing. It is what really makes it special.
To make the dressing you only need a handful of ingredients added together and then simply boil them until they reduce to half. This may take 5-7 minutes once it comes to a boil to get there, but it will!
This process brings out the natural sweetness of the juices and allows the juices to form into a light and flavorful dressing that perfectly compliments the fresh fruit to enhance its natural flavor.
I suggest letting the dressing meld with the fruit for about 30 minutes for the best flavor. It really only gets better though, so you can keep it in the refrigerator overnight or longer and it will only get more delicious!
Leftovers
I love to have leftovers of this salad because not only does it just get more and more tasty as it sits marinating in the fruit salad dressing, but it also makes a perfect wholesome snack.
To save leftovers, package the remaining fruit in an airtight container and store in the refrigerator for up to 4 days.
I do not recommend freezing the fruit salad as it will change the texture of the fruits.

Summer Fruit Salad
Ingredients
- 1/3 cup orange juice
- 1/3 cup pineapple juice, (from canned pineapple)
- 1 lemon, juice from
- 1/3 cup Monk Fruit In The Raw, Bakers Bag
- 1/2 tsp vanilla extract
- 16 oz strawberries, quartered
- 4 kiwi, sliced
- 11 oz blueberries
- 2 cups seedless grapes, red or green
- 14 oz canned pineapple chunks in 100% juice, juice drained and reserved
- 6 oz raspberries
- 6 oz blackberries
Instructions
- Combine all of the fruits in a large bowl.
- In a small sauce pan, add the orange juice, 1/3 cup pineapple juice (discard the rest), fresh squeezed lemon juice, Monk Fruit In The Raw and vanilla. Then place the pan over medium high heat until it starts to boil.
- Allow the dressing to boil for 5-10 minutes, until it has reduced by about half. Then remove from heat and allow to cool.
- Pour the cooled dressing over the fruit mixture and toss to coat the fruit in the dressing.
- Refrigerate until serving. Enjoy!
