Mediterranean Flatbread is topped with pesto, chicken, veggies, kalamata olives, and two different kinds of cheese for the most amazing tasting flatbread pizza! The combination of flavors has made this Mediterranean chicken flatbread an instant favorite around here. And it’s SO easy to make – just a few ingredients and only 20 minutes to make!

Flatbread pizzas are one of my favorite ways to get a yummy dinner on the table, FAST! I absolutely love that they’re easy to customize for different tastes. But best of all, they’re SO easy to make and on the table fast. 

I’ve shared Chicken Bacon Ranch Flatbread, BBQ Chicken Flatbread, spicy Buffalo Chicken Flatbread, and Caprese Flatbread. I love them all, but today I wanted to bring ALL the Mediterranean flavors together for a Greek-inspired flatbread pizza for a fresh flavor twist!

  • SO easy – Just lay out your naan or other flatbread, smear on the pesto and pile it up with ingredients, top with cheese, and bake!
  • Ready fast – When it feels like life is never not busy, 20-minute homemade meals like this one are my savior!
  • Family friendly – Everyone loves flatbread pizzas, and this Mediterranean flatbread is no exception. 
  • Versatile – Switch up the toppings, cheeses, or protein however you like. It’s easy to customize Mediterranean flatbread.

This Mediterranean Flatbread recipe is as simple as promised! Just a 20 minutes for a family friendly meal.

In this section I am going to go through a few tips and tricks I use for how to make Mediterranean Flatbread to get the absolute best and most delicious results.

Ingredients + Substitutions

Ingredients for Mediterranean Chicken Flatbread.
  • Flatbreads – My favorite flatbread for pizzas? Naan! It’s soft yet sturdy and makes the perfect pizzas. You can use pitas or another flatbread, if you prefer.
  • Pesto – Grab your favorite pesto from the store or make homemade pesto.
  • Mozzarella cheese – I like to use whole-milk or part-skim, low-moisture mozzarella. For a super easy Mediterranean flatbread pizza, grab pre-shredded cheese at the store.
  • Chicken – You’ll want shredded, cooked chicken. Any cooked, neutral (not highly seasoned) chicken will work. I love to use rotisserie chicken that I grabbed from the grocery store, or leftover homemade rotisserie chicken.
  • Cherry tomatoes – Cut in half or quarter for juicy flavor and a burst of color.
  • Spinach – Use chopped fresh spinach leaves. Packaged baby spinach is great, too.
  • Red onion – A few slices of red onion add a bit of crisp flavor. Sweet onion, yellow onion, or white onion will also work.
  • Kalamata olives – Just a few, sliced and scattered evenly over your Mediterranean chicken flatbread, adds a little punch of salty flavor.
  • Feta cheese – Creamy, salty crumbles of feta take this pizza over the top!

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Mediterranean Veggie Flatbread– Omit the chicken and double the vegetables for a Mediterranean flatbread that’s perfect for the vegetarians in the house! You can even add artichoke hearts for an extra boost of flavor.
  • Spicy Mediterranean Flatbread– Add a sprinkle of crushed red pepper flakes to the pesto and again more over the top of the cooked pizza for a hit of heat.

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Mediterranean Flatbread.

Place the flatbread on a baking sheet and spread the pesto sauce over both pieces.

Sprinkle evenly with the mozzarella, then scatter the chicken over the top.

Add the spinach, red onion, and feta. Bake until the cheese is melted and the edges are crisp. Drizzle a little more pesto on top.

Recipe Tips

  1. Slice the onion thinly – The taste of red onion can overpower the other flavors, so be sure and slice your onion thin.
  2. Adjust the toppings as needed – Have an olive hater in the house? Leave the olives off of one of your pizzas. Feta lovers? Pile it on! This recipe is very forgiving and easy to adjust to individual tastes.
  3. High heat for the crispest flatbread – This recipe calls for cooking your flatbread pizza at high heat so that the toppings warm, the cheese melts, and the flatbread crisps up around the edges without getting soggy.
  4. Use thick, sturdy flatbread – Naan is the perfect crust for flatbread pizzas because it holds up well to the toppings.

Recipe Short Cuts

If you need to make this recipe, but are extra short on time, here are a couple of ideas that can help make this recipe even faster!

  • Use parchment paper – Cover your baking sheet with parchment paper before adding the flatbread pizza for easy clean-up.
  • Grab premade/already-prepped ingredients – Buy a tub of pesto or rotisserie chicken at the grocery store for super easy Mediterranean flatbread toppings. Pre-shredded cheese can save you a few minutes, too.

What to Serve with Mediterranean Flatbread

Since this protein based dinner has the delicious flavors of Mediterranean cuisine, it will pair well with many of your favorite Mediterranean-inspired side dishes.

If you have leftovers after making this recipe, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days

Recipe FAQ’s

What is the difference between naan and flatbread?

There isn’t really a difference between naan and flatbread, because naan is a type of flatbread. Other types of flatbread include pita and lavash bread.

What’s the difference between flatbread pizza and regular pizza?

Flatbread pizzas are generally smaller, with a thinner crust, than regular pizza. It can be made with homemade flatbread or store-bought flatbread such as naan for quick and easy pizzas.

The easiest way to make pizza? Flatbreads! These Mediterranean flatbread pizzas are smothered in pesto then topped with chicken, veggies, olives, mozzarella, and feta and baked until bubbling and golden. Ready in 20 minutes!

Ingredients 

  • 2 8 inch flatbreads, I use naan
  • ¼ cup pesto, prepared, plus more for drizzle
  • 1 cup shredded mozzarella
  • 1 cup shredded chicken, I used rotisserie
  • 4 ounces cherry tomatoes, halved or quartered
  • 1/2 cup chopped fresh spinach
  • 1/2 small red onion, sliced
  • ¼ cup kalamata olives, sliced
  • 1/3 cup feta cheese, crumbled

Instructions 

  • Preheat oven to 425˚F.
  • Place the flatbread on a baking sheet, and spread the pesto sauce over each one. Sprinkle evenly with mozzarella cheese.
  • Top each pizza with shredded chicken then add the tomatoes, spinach, onion, and olives. Sprinkle with feta cheese crumbles. Drizzle a little extra pesto on top.
  • Bake for 10-12 minutes on the middle rack. Once the cheese is melted and the outer edges of the crust is crispy, remove from the oven.
    Cut into 3-4 slices and serve immediately. Enjoy!

Substitutions: 
  • Chicken: Shredded cooked turkey will work in place of the chicken.
How to Store: Store leftovers in an airtight container in the refrigerator for up to 3 days. 
How to Reheat: This can be reheated in the microwave in 30 second increments, or  place into the oven to reheat. 
How to Scale: This recipe can easily be doubled if you are feeding a crowd or halved for smaller portions.

    This turned out amazing! My kitchen smelled like a restaurant and it tasted just as good. I bought rotisserie chicken, pre-sliced olives, and jarred pesto and so the only thing I had to do was slice a little bit of onion and halve a few tomatoes. It took no time and was a huge hit. It’s going on repeat at my house. Thanks so much!
