Recipe Notes

This viral chicken cobbler recipe is as simple as promised! Just 10 minutes of prep and 1 pan for a family friendly meal.

In this section I am going to go through a few tips and tricks I use when making this recipe to get the absolute best and most delicious results.

Make sure to scroll to the bottom for the FULL recipe card.

Ingredients for making chicken cobbler including shredded chicken, red lobster cheddar bay biscuit mix, cream of chicken soup, vegetables, and milk.

Ingredients + Substitutions

  • Butter
  • Cooked Chicken – You can use any pre-cooked options with traditional seasonings like leftover chicken breasts or store-bought or homemade rotisserie chicken. Or feel free to cook it fresh for this recipe. This is my go-to baked chicken breast recipe for using in casseroles.
  • Frozen Vegetables – I used mixed veggies, but you could also go with peas and carrots.
  • Cheddar Bay biscuit mix – This is also known as Red Lobster biscuit mix. If you can’t find it, you can use any biscuit mix on the shelf at the store like Bisquick.

Look for a standard sized box that can be prepared with only liquid. You’ll find it by the cake mixes on the baking aisle. You can also make your own homemade Bisquick quickly and easily.
  • Milk
  • Chicken broth – Vegetable broth will also work in this recipe.
  • Cream of chicken soup– Store bought or homemade

Recipe Step by Step

How to Make Chicken Cobbler step 1: Add shredded chicken and vegetables to casserole dish.

First add the shredded chicken and frozen vegetables to the bottom of a casserole dish.

How to Make Chicken Cobbler step 2: Pour red lobster cheddar bay biscuit mix over the chicken and vegetables.

Combine the Red Lobster Cheddar Bay Biscuit mix and milk, then pour it over the chicken.

How to Make Chicken Cobbler step 3: Mix cream of chicken soup with broth and pour over the top of the casserole.

Combine the cream of chicken soup and chicken broth and pour that over the biscuit mix.

How to Make Chicken Cobbler step 4: Bake the casserole until the layers are set.

Bake the casserole until the top starts to brown and the layers are set.

Recipe Tips

  1. Use the oven to melt the butter – Instead of using a separate bowl, one of my favorite time-saving tips is to add the butter to the 9×13 pan and pop it into the oven while it preheats. By the time I’ve gathered ingredients and prepped the chicken, the butter will be melted and ready to go.
  2. Lumps are okay – It’s normal to see lumps in the biscuit mix after whisking in the milk. Stir to break down any very large lumps, but otherwise don’t worry about it. They’ll bake right out!
  3. DON’T Mix it! – It seems crazy I know but you DON’T want to mix the casserole at any point. Pour the prepared biscuit mix on top of the chicken and veggies, then the cream of chicken and broth mixture on top of that with NO mixing. Magic happens in the oven, so save yourself the stirring!
  4. Let is set up after baking – It’s always a good idea to let a casserole rest after it comes out of the oven. The liquid cools just enough to thicken the sauce and make it easier to scoop. I give it at least 5 minutes before serving.

Recipe Short Cuts

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Buy pre-shredded chicken– Rotisserie chicken is an easy option, but you can also often save time by purchasing pre-shredded chicken at the grocery store. It’s usually available near the deli section or by the prepared meats.
  • Bake it ahead– Casseroles are amazing at reheating. Feel free to bake this ahead of time and simple re-warm it in the oven, covered, for 20-30 minutes before serving.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Bisquick Chicken Cobbler– Swap in Bisquick mix for the cheddar bay biscuit mix. Make sure you’re using the same amount of dry mix, about 11.36 ounces, and then follow the recipe as written. You can use store bought, or my homemade Bisquick mix.
  • Broccoli Chicken Cobbler– Swap out the frozen mixed vegetables for frozen broccoli. Then continue on with the recipe.
  • Cheesy Chicken Cobbler– Make the your chicken cobbler cheesy by adding in 1-2 cups of shredded cheese between the vegetable and chicken layers. Bake as directed.

  1. Assemble the casserole through step 4 in a freezer safe casserole dish.
  2. Freeze.
  3. When ready to cook, thaw in the fridge for 24-48 hours.
  4. Bake as directed.

Chicken Cobbler Leftovers

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days

Made this for dinner. Very easy. I used cream of mushroom soup rather than chicken soup and used parmesian in the biscuit mix. Turned out really good.

Made the recipe pretty much to the letter. Did add some seasonings to the vegetables and chicken. When I make this again I’m pouring the soup and broth mixture over the chicken and vegetables, adding different seasonings I prefer and stirring all that together well before topping with the biscuit mix. Believe that will give a more crispy crust and mixing the chicken, vegetables and soup more flavor and more of a pot pie consistency.

What about the herb seasoning packet that comes with the biscuit mix?

Just add it in with the biscuit mix. I’ll add a note in the recipe to make sure it is more clear. Thanks for the heads up!

Very easy, but too expensive for the results which were disappointing. The consistency was rather stodgy. Besides this, it’s a very hearth unhealthy recipe. Just take the time to prepare a good chicken pie where you are in control of the sodium.

This was very easy and good. Cooked my own chicken and did the rest as is. Loved the cheddar biscuit mix, think that made it extra yum!

I made this tonight for dinner. It was super easy but feel like the final product was a little dry. I feel like the amount of soup and broth could be doubled. Also, some seasonings wouldn’t be a bad idea. All that said, it was still very yummy and was an excellent meal. I served it with a side of mashed potatoes

Some of the other versions I’ve seen of this use 2 cups of broth.

Hi! I just googled. You can use flour, baking soda, salt & melted butter mixed. I pray it works! Peace, love and blessings!

This was excellent but I had several questions. The recipe calls for 1.5 cups milk, but instructions say whisk biscuit mix and 2 cups milk. I added 1/2 cup of cheddar cheese because on the biscuit instructions it says add 1/2 c. Cheese. The last question is can you add the chicken broth and cream of chicken soup on top of veggies and then put biscuit mix on top of the soups instead? Basically reversing steps 3 and 4. I served a cucumber, tomato salad with cubed avocado and feta cheese/Greek dressing. This is a favorite now!

How does it turn out with the cheese? I’m getting ready to make it in a couple of hours.

You can reverse steps 3 and 4, just that you will get a more crusty biscuit on top instead of a softer crust. Totally up to personal preference, just that most versions of this recipe that you find all call for the liquid to be last. Adding the cheese is fine, in fact if you want it cheesier then add 1 1/2 cups between the frozen vegetable and chicken layers. Personally I ass powdered garlic and a few other spices after step 3, but again personal preference. Online recipes are great, but I suggest always using them as a bare bones know to work recipe, and almost always add to them for my household taste preference.
