Family Meal Plan
MONDAY
- Main Dish: – Catalina Chicken– I was skeptical when someone gave me this recipe, but it is SO GOOD! Plus only 5 ingredients and one dish to make it. For those curious, it has kind of a sweet and savory taste like BBQ sauce (but different!) Make sure to let me know (in the comments) if you try it!
- Side Dish:
- Roasted Green Beans – Us the 3 ingredient basic recipe, or choose one of the 5 flavor options.
- Garlic Mashed Potatoes– This is our go-to easy weeknight recipe
TUESDAY
- Main Dish: Cheesy Beef Enchilada Skillet– I serve this in tortillas for the kids and as bowls for my husband and me. This gets great reviews not only from my fam, but many readers too!
- Side Dish:
- Black Beans – Try my FAVORITE crock pot recipe!
- Mexican Rice – Tastes just like your fav Mexican restaurant!
WEDNESDAY
- Main Dish: Chicken Parmesan Casserole– All the flavor of the original in casserole form, so it is a quick, easy and family friendly meal.
- Side Dish:
- Roasted Vegetables– Bake these right along with the casserole
- Garlic Bread– The garlic bread spread makes all the difference!
THURSDAY
- Main Dish: Beef Enchilada Nachos – Make classic or “lighter” pepper nachos with the leftovers from Tuesday. Cut mini sweet peppers in half and remove the seeds and stems. Stuff each pepper full of the ground beef mixture. and top with cheese. Bake at 425˚F until the cheese is melted, the meat is heated through, and the pepper is softening.
- Sides:
- Toppings– Top with sour cream, guacamole and salsa fresca.
- If you have any leftover rice and beans, you can heat those up too!

FRIDAY
- Main Dish: BBQ Chicken Drumsticks– My kids ask for these over and over again! I like to make a double batch to have extra for them to eat through the weekend.
- Side:
- Veggies and Ranch Dressing – if you have 5 extra minutes the homemade dressing is WORTH IT!
- Rotini Pasta Salad– Fresh, simple, and delicious.
- Side:
- Dessert – Texas Sheet Cake– I love this because it is WAY easier than a regular cake, but every bit as delicious!
APPETIZER
- Mexican Style Spinach Dip– Not your same old boring spinach dip. This one is LOADED with zesty flavors and is heaven with a bag of chips!
