Family Meal Plan
MONDAY
- Main Dish: – Firecracker Chicken– One of our most recent favorites, this dish is a nice escape from the norm. With a little bit of sweetness and a little kick, this one is just plain delicious!
- Side Dish:
- Rice- Try jasmine or brown rice- your choice!
- Yum Yum Sauce– You have to have this stuff for drizzling over the top!
TUESDAY
- Main Dish: Mexican Chicken Casserole– I have more people tell/message me to say this recipe is a staple in their home. If you haven’t tried it, what are you waiting for?!
- Side Dish:
- Side salad – Top it with this amazing jalapeno ranch dressing. It is seriously the best stuff EVER!!!!
- Mexican Street Corn Casserole – Tastes just like the on the ccob favorite but quicker and easier to eat!
WEDNESDAY
- Main Dish: Creamy Pesto Chicken– This is a staple for us. Everyone including the kids will lick their plates!
- Side Dish:
- Mashed Potatoes– This recipe is super simple and extra creamy. I serve a big scoop of the chicken and sauce right on top.
- Garlic Parmesan Broccoli- Roasted broccoli is so crazy delicious, I don’t know if I can eat it any other way!
THURSDAY
- Main Dish: Cajun Butter Steak Skillet – This is one of those that are so quick it is hard to believe it is so good! It does have a kick, so skip the spice if you don’t like the heat.
- Sides:
- Garlic Smashed Potatoes– Get the flavor of french fries in these oven baked potatoes!
- Kale Salad– The dressing on this salad is so good, it might even convert the non-kale lovers. It is a must try! Make it ahead and let it sit a couple of hours to soften the kale by dinnertime.
- Sides:
FRIDAY
- Main Dish: Nacho Stuffed Peppers– Using leftovers from Tuesday- Cut mini sweet peppers in half. Place a spoonful of leftover Mexican Chicken Casserole in each pepper “chip” then top each with cheese. Bake at 425 for 12-18 min or until cheese is melted and pepper starts to soften. Top or dip pepper nachos with sour cream, guacamole, and/or salsa.
- Side:
- Chips and salsa – try my 5 minute homemade salsa!
- Tableside Guacamole– Just like the restaurant!!
- Side:
- Dessert – Lemon Meltaway Cookies– These are the best. Seriously. They are a MUST TRY!
APPETIZER
- Green Chile Cheddar Dip– Grab these with a bag of chips and you have the beginning of a delicious day.
