Family Meal Plan
MONDAY
- Main Dish: Honey Garlic Chicken– One of my favorites, and this easy skillet meal can be ready in as little as 20 minutes!
- Side Dish:
TUESDAY
- Main Dish: Pork Carnitas– You can makes these into tacos, eat them in a bowl or as a low carb lettuce wrap.
- Side Dish:
- Black Beans
- Chips & Homemade Salsa
WEDNESDAY
- Main Dish: Crockpot Caesar Chicken– ONLY 3 INGREDIENTS for the win!! I love to serve this chicken in romaine leaves with parmesan sprinkles on top kind of like lettuce wraps. You can add other caesar toppings if you want like croutons, hard boiled egg, cherry tomatoes, bacon etc.
- Side Dish:
- Tomato Mozzarella Salad– This is salad is a perfect compliment to the Caesar lettuce wraps.
- Homemade Croutons– If you really want to go all out, make some homemade croutons. It is so easy and EXTRA delicious!
THURSDAY
- Main Dish: Italian Stuffed Peppers– Great for a mid-week dinner. You can prepare these peppers ahead of time if needed and refrigerate until you are ready to bake.
- Side Dish:
- Baked Asparagus – This can bake right along side the peppers in the oven. (note, it will take less time, so just put it in toward the end of the cook time).
- Garlic Bread – This recipe makes THE BEST garlic bread EVER!!
FRIDAY
- Main Dish: Chicken Caesar Pesto Pasta Salad– Use the leftovers from Wednesday for this delicious and super simple weekend dinner. Mix chopped romaine lettuce with freshly cooked and cooled pasta (I like bowtie best!) Add in the leftover chicken, cherry tomatoes and parmesan cheese. Toss with equal parts caesar dressing and prepared pesto. Enjoy!
- Side: Breadsticks
- Dessert – Peanut Butter Pretzel Brownies– These are super easy and made from a box, but the look and taste every bit of a gourmet treat!!
