Family Meal Plan
MONDAY
- Main Dish: – Crockpot Meatballs in Marinara– This is a new recipe, and already receiving great feedback from readers! The combination of quick, kid-friendly, and DELICIOUS is a winner!
- Side Dish:
- Pasta – Go classic with spaghetti, or something more kid friendly like shells, ziti, or elbow macaroni
- Side salad with creamy Italian dressing– This dressing takes 5 min to make and is SO GOOD!!
TUESDAY
- Main Dish: Chicken Fajita Casserole– This casserole is so EASY and ridiculously delicious!! There will definitely be a fight for the leftovers (if you have any!!)
- Side Dish:
- Mexican Roasted Veggies – These are a great wholesome addition!
- Cornbread – Try my quick Mexican style cornbread, OR our homemade buttermilk cornbread!
WEDNESDAY
- Main Dish: – Tuscan Pot Roast– This is the perfect mid-December meal!! 1. The slow cooker does the work. 2. THe flavors are so warm and comforting. 3. It can pull double duty for leftovers later when you need a break cooking!
- Side Dish:
- Creamy Mashed Potatoes – Our go to mashed potato recipe.
- Crispy Roasted Brussels Sprouts– Even my kids like brussels sprouts this way!!
THURSDAY
- Main Dish: Ranch Baked Chicken Thighs – Maybe the fasted prep of any dinner. These are not only quick, but cook hands off to tender perfection in the oven.
- Sides:
- Rotini Pasta Salad– A classic pasta salad that is always a hit! BONUS- shred leftover chicken and mix in to this salad for on the go lunches!
- Garlic Parmesan Broccoli– This easy roasted broccoli is so good, you kinda forget it is a veggie!!
- Sides:
FRIDAY
- Main Dish: Pot Roast Shepherd’s Pie– Mix leftover pot roast with mixed veggies and cream of mushroom soup. Spread in the bottom of a baking dish and top with mashed potatoes. Bake at 350˚F for about 30 minutes or until the edges start to bubble and the top is golden.
- Side:
- Tomato Soup– This recipe is so easy and SO delicious!
- Side:
- Dessert – Soft Sugar Cookies– I always make these in December, and every time I just relish in how delicious that they are! If you think sugar cookies are boring… try these!!
APPETIZER
- Loaded Taco Dip– If you need something to feed a crowd, THIS IS IT!! Everyone loves this flavor-packed dip and you can feed a hungry group since it makes a large pan!
- BONUS– If you haven’t seen my cool cinnamon roll hack, you have to check it out! It has been going viral on social media and it is SO GOOD!!
