- Onion – I usually use a standard yellow onion, but white onion or sweet onion will also work well.
- Chicken – I like to use boneless, skinless chicken breast for this Crockpot chicken and potatoes. Boneless, skinless chicken thighs would work, too.
- Green beans – You’ll want a pound of fresh green beans with the ends trimmed off.
- Potatoes – I love Yukon Gold potatoes in this recipe. With their thin, flavorful skin, you don’t have to peel them, and I love their fluffy texture and buttery taste!
- Italian dressing mix – Buy it in the salad dressing section at your local grocery store, or try my homemade Italian dressing mix.
- Butter – You’ll use two tablespoons of salted butter.

- Slow Cooker Chicken, Potatoes, & Carrots– Swap in a pound of baby carrots instead of the green beans. You can also use 1/2 pound of baby carrots and 1/2 pound of green beans for more color and variety.
- Slow Cooker Garlic Parmesan Chicken & Potatoes– Add four fresh cloves of garlic, minced finely, along with the second half of the Italian seasoning. Top the finished dish with a generous sprinkle of shredded Parmesan cheese.

Recipe Step by Step

Line the bottom of the Crock Pot with the diced onion.
Top with the chicken and sprinkle half of the Italian dressing mix over the top.
Cut the potatoes into bite-size chunks and add them to the slow cooker, over to one side.
Add the green beans to the other side of the Crock Pot.

- Add the onion to the bottom of the Crock Pot first – I like to dice the onion and place it on the bottom of the slow cooker to act as a bed of sorts for the chicken. The aromatic onion adds wonderful flavor to the chicken this way.
- Prep one, freeze one – Sometimes I’ll prep a second Crock Pot meal at the same time to freeze for later on. Just prop a gallon-size freezer bag up in a bowl and add a second set of ingredients to the freezer bag, label, and freeze. When I know we have a busy week coming up, I’ll pull it out and thaw overnight in the fridge, then pour the contents of the freezer bag into the Crock Pot for dinner that night!

Here are a few ways to repurpose those leftovers and give them a delicious makeover!
- Skillet Chicken Pot Pie– Add a tablespoon of butter to a skillet and, when melted, stir in a tablespoon of all-purpose flour. Cook, stirring, for three minutes, then drizzle in 3/4 cup of chicken broth. Warm until thickened, then stir in 1/2 cup of heavy cream plus leftover chicken, potatoes, and green beans. Top with squares of puff pastry and brush with a beaten egg. Bake at 375°F for 30 minutes or until the filling is bubbling and the puff pastry is golden brown.
- Cheesy Chicken & Potato Casserole– Shred leftover chicken and add that, along with the cooked potatoes and green beans, to a bowl along with with one can cream of mushroom soup, 3/4 cup milk, and 1 cup shredded cheddar cheese. Pour into an 8×8 baking dish, sprinkle some more cheddar on top, and bake at 350°F for 25 minutes or until bubbly.
- Creamy Chicken Potato Soup– Cook two pieces of bacon in a Dutch oven. Remove and set aside. In the bacon grease, sauté 1/2 cup each diced onion, celery, and carrots until tender, then add 2 minced garlic cloves and sauté for another minute. Add four cups chicken broth along with some shredded leftover chicken, potatoes, and green beans. Bring to a boil and simmer uncovered for about 15 minutes to allow the flavors to meld. Stir in one cup half and half. Top individual servings with shredded cheddar and the cooked bacon crumbled over the top.

Can raw chicken and potatoes be cooked together?
Yes! As long as the chicken is cooked through and everything cooks at safe temperature, it’s perfectly fine to cook chicken and vegetables, including potatoes, together.
Can you put raw chicken straight into a slow cooker?
Absolutely! Some recipes do suggest searing the chicken in a hot pan before adding it to the slow cooker, but this is to add golden brown color and a bit of extra flavor to the chicken. You can sear the chicken before adding it to the Crock Pot for this Slow Cooker Chicken and Potatoes recipe, but it’s not necessary.

Slow Cooker Chicken and Potatoes with Green Beans
Ingredients
- 1 onion, diced
- 2 pounds chicken breast
- 1 pound green beans
- 1.5 pounds Yukon gold potatoes
- 2 tablespoons Italian dressing mix
- 2 tablespoons butter
Instructions
- Place the diced onion on the bottom of the slow cooker. Add the chicken breast over the onion.
- Season the chicken with half of the Italian dressing mix.
- Cut the potatoes into bite sized chunks and place them on one side of the slow cooker over the chicken. Place the green beans over the other side of the chicken.
- Sprinkle the rest of the Italian seasoning over the top of the potatoes and green beans, then drizzle the melted butter over the everything.
- Place the top on the slow cooker and cook on high for 3.5-4 hours, or low for 4.5-5 hours.
