Recipe Variations
If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!
- Make them nutty – Add a nutty crunch to every bite with a sprinkle of chopped pecans or walnuts.
- Try another flavor – Swap the flavor using raspberry jam, strawberry jam, apricot jam, or even fig jam in place of the cranberry sauce.
- Make them savory – Swap the cranberry sauce out for pepper jelly for a kick of heat or make them a little bit savory with a dollop of pesto or a sprinkle of bacon bits.
Recipe Step by Step
I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Cranberry Brie Bites with Puff Pastry.

Cut the brie into 24 cubes.

Bring the puff pastry to room temperature, then cut into 24 rectangles.

Spray a mini muffin tin with cooking spray, then place 1 piece of puff pastry into each space.

Add a cube of brie cheese and a dollop of cranberry sauce to each puff pastry cup, then bake at 400ºF for 15-18 minutes or until golden brown and puffed.
Recipe Tips
- Bring the puff pastry to room temp – Bringing the puff pastry to room temperature for 20-30 minutes before cutting just makes it easier to work with and shape without it cracking.
- Spray the pan – Trust me on this one. A light layer of cooking spray makes it so much easier to get the brie bites out of the pan.
- Chill the brie – Before slicing, pop the brie in the freezer for 10 minutes to help it firm up. Brie is a very soft cheese, so it’s easier to work with when it’s a little bit cold.
- Remove immediately after baking – These bites are pretty easy to get out of the pan while they’re still hot, but become much harder to remove once they cool. I recommend taking them out of the muffin tin right away after baking!
