This Baked Brie in Pie Crust is the simplest appetizer with the BEST flavor! It’s made with a whole wheel of melty brie cheese encased in a buttery, flaky, golden pie crust, and can be customized with flavors galore. It’s perfect for the holidays with crackers, baguette slices, fruit, veggies, you name it.

This Baked Brie in Pie Crust recipe is one of my absolute favorite holiday or party appetizers. Not only is it super fun and incredibly tasty, but it’s also ridiculously easy! Seriously. It doesn’t get easier than this.

I also love it because it can be customized with any kind of flavor that you feel like sounds good or fits your theme or season. It’s a blank slate for any number of toppings!

This simple appetizer is sure to impress at any gathering.

What is Baked Brie en Croute?

En Croute is a french term for cooking something in a pastry crust. So baked brie en croute is baked brie cooked in a crust. In our case we are wrapping it in pie crust!

Recipe Notes

This baked brie recipe is as simple as promised! Just a four ingredients (including water) for a crowd-pleasing appetizer.

In this section I am going to go through a few tips and tricks I use for how to make baked brie with pie crust to get the absolute best and most delicious results.

Ingredients + Substitutions

  • Brie – You can use a 16 ounce wheel of brie or an 8 ounce wheel of brie. The large wheel of brie will not fit completely into the pie crust, but it will still work just fine!
  • Pie Crust – Make sure you’re using a flat refrigerated sheet of pie crust. Not the frozen kind already in the tin. I use Pillsbury that can generally be found in the refrigerated section next to the biscuits.

    You can also make your own pie crust for wrapping the brie if you prefer, but I have found that the refrigerated dough shortcut works really well and produces a tender flakey crust for the brie that I am very happy with.
  • Egg Wash – An egg wash, made with a mixture of egg and water, is brushed over the pie crust to help it get nice and golden in the oven.

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Baked Brie in Pie Crust.

Roll out the pie crust onto a flat surface. Place the wheel of brie, cut side down in the middle of the pie crust.

Fold the edged up over the side of the wheel of brie.

Brush the egg wash over the top of the pie crust.

Bake at 425 degrees for 18-22 minutes.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Baked Brie in Puff Pastry – Swap the pie crust out for puff pastry dough for an even lighter, fluffier, flakier option. Keep in mind that it may bake up differently than pie crust, so keep an eye on it so as not to overcook it.
  • Baked Brie with Jam – Before assembling the baked brie, spread a layer of your favorite jam onto the pie crust. You can use a fruitier jam such as raspberry, blackberry, or peach OR you can use something more savory like jalapeño.
  • Baked Brie with Cranberries – Whip up a batch of homemade cranberry sauce and layer that into your appetizer.
  • Baked Brie in Pie Crust with Honey – Top the brie or the pie crust with a drizzle of your favorite honey. Try adding a handful of chopped walnuts or sweet and spicy pecans for a little bit of crunch.
  • Baked Brie in Pie Crust with Brown Sugar – Top the pie crust with a sprinkle of light or dark brown sugar before you add the cheese and bake. This adds a warm, caramel-y sweetness.
  • Savory Baked Brie in Pie Crust – Try giving your brie a savory twist by adding your favorite herbs, sautéed mushrooms, caramelized onions, you name it.
  • Baked Brie with Fruit – Make a fruity appetizer with sliced apples, sliced pears, apricots, you name it. The sky really. is the limit.

There are tons of options, so get creative with it, mix-and-match, and have fun!

Recipe Short Cuts

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Prep partially, then refrigerate – To get things prepped ahead of time, you can fully assemble your brie and pie crust dish, but don’t bake. Instead, cover and store in the fridge, then bake as directed when you’re ready to serve.
  • Bake fully and refrigerate – Once baked, this brie in pie crust can be stored in an airtight container in the fridge for 1-2 days. So, if you want to get a little bit ahead, you can bake it in advance, then reheat it whenever you’re ready to serve.

What to Serve with Brie Baked in Pie Crust

This baked brie in Pillsbury pie crust is excellent served with crostini, crackers, baguette slices, fruit, veggies, you name it.

It’s also the perfect addition to a larger holiday appetizer spread. Here are some of my favorite appetizers to enjoy alongside this one:

What to eat with Brie

You will need to have something to spread the gooey, melty, brie on when you serve this dish, and there are a lot of really delicious options depending on what your preferences are.

  • Crackers
  • Sliced baguette
  • Apple slices
  • Vegetables- cucumbers, carrots, pepper slices, etc
  • Pita Chips

Other appetizers to serve with brie

  • Spinach Artichoke Dip – Enjoy this creamy classic with just 15 minutes of prep. This mouthwatering dip is packed with spinach and artichoke, then topped with mozzarella and parmesan.
  • Crispy Toasted Tortellini – This toasted tortellini is a pasta-lover’s appetizer dreams come true. It’s made with 3 cheese tortellini coated in breadcrumbs and parmesan, then baked until deliciously crispy on the edges.
  • Garlic Bread Pizza – Make your appetizer spread extra cheesy with this decadent garlic French bread pizza. It’s layered with garlic butter, pepper, olives, mushrooms, pepperoni, and gooey mozzarella cheese.

Baked Brie Leftovers

If you have leftovers after making this recipe, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days

Recipe FAQ’s

Should you cut the rind off brie before baking?

That’s totally up to you! I personally prefer less rind to make the gooey deliciousness of the cheese more accessible, so I usually take a serrated knife and shave the top rind off of the brie. If you don’t mind the rind, feel free to leave it on.

How long do you leave brie in the oven?

Your brie should stay in the oven for anywhere from 18-22 minutes. The best way to tell that it’s done is to check the pie crust. It will be shiny and golden-brown on top!

This Baked Brie in Pie Crust is an appetizer like no other! It's made with a whole wheel of melty brie cheese encased in a buttery, flaky, golden pie crust. It's perfect for the holidays with crackers, baguette slices, fruit, veggies, you name it.

Ingredients 

  • 16 ounce brie wheel , or 8 ounce *see note
  • 1 refrigerated pie crust
  • 1 egg
  • 1 tablespoon water

Instructions 

  • Preheat the oven to 425˚F.
  • Use a serrated knife to shave the top rind off of the wheel of brie. It is okay if there is a little bit left.
  • Roll out the pie crust onto a flat surface. Place the wheel of brie, cut side down in the middle of the pie crust.
    Fold on edge up over the side of the wheel of brie. Move about 2 inches down and bring the side up and over again, creating a pleat. Continue moving around the wheel creating pleats until all edges of the pie crust are folded over the brie. The crust will not completely cover the brie, but that is okay since this will be the bottom.
  • Line a rimmed baking sheet with parchment paper, then place the brie pleat side down (smooth side up) on the baking sheet.
  • Crack the egg into a dish and scramble with a whisk. Add 1 tablespoon of water and whisk to combine. Use a pastry brush to brush the egg wash over the top of the pie crust.
  • Bake for 18-22 minute, or until the pie crust is cooked through and the tops of the brie is shiny and golden brown.
  • Serve warm alone or with crackers, fruit, veggies or a baguette.

Recipe Notes

Decorative Brie in Pie Crust
If you prefer a more decorative presentation, use an 8 ounce wheel of brie. 
  1. Shave off the top rind.
  2. Roll out the pie crust onto a flat surface. Place the wheel of brie, cut side up in the middle of the pie crust.
  3. Fold on edge up over the side of the wheel of brie. Move about 2 inches down and bring the side up and over again, creating a pleat. Continue moving around the wheel creating pleats until all edges of the pie crust are folded over the brie. The brie should be completely encased in the pie crust. 
  4. Place the brie pleat side up (smooth side down) on a parchment lined baking sheet.
  5. Brush with egg wash and bake 20-25 minutes.
Filled Brie in Pie Crust
If you want to add additional flavors and fillings you can do so inside the pie crust or on top of the pie crust. To add inside the pie crust, just add the filling on top of the cut side of the brie before wrapping in the pie crust.
Here are some of our favorite filling options:
  • Cranberry sauce
  • Diced apples with cinnamon and honey
  • Raspberry preserves
  • Pecans and honey
