Cucumber Tomato Salad Recipe

During the week I make an effort to try and eat salads as much as possible. I’m always trying to switch up my salads because I can get pretty tired of them. That’s when I rely on inspiration for new recipes.

This recipe came about because of my love for fresh and delicious flavors from the garden. I was walking through the produce isle when inspiration came to me for this salad. The flavors in this salad are the perfect blend of salty and sweet. The dressing for this salad is a perfect marriage to bring the salad together.

  • Quick to Make – This easy salad comes together in just minutes with simple, everyday ingredients.
  • Perfect for Summer – Great for BBQs, potlucks, cookouts, brunches, or an easy side dish on hot days.
  • Easy cleanup – Just one bowl and one cutting board needed to put this together. Minimal dish recipes are my favorite ones!

Ingredients + Substitutions

Ingredients to make cucumber tomato salad - cucumbers, tomatoes, onion, olive oil and red wine vinegar
  • English Cucumber – Crisp and refreshing with fewer seeds than regular cucumbers. You can substitute garden cucumbers if needed, but peeling and removing some seeds is recommended.
  • Roma Tomatoes – These hold up well in the salad and add great flavor without too much extra liquid. Cherry, grape tomatoes or vine-ripened tomatoes can also work.
  • Red Onion – Adds the perfect sharp bite and color. For a milder flavor, soak the sliced onion in cold water for 10 minutes before adding.
  • Red Wine Vinegar – Gives the salad its classic tangy flavor. White wine vinegar or apple cider vinegar can be used in a pinch if you’re short on dressing ingredients.
  • Extra Virgin Olive Oil – Balances the acidity and brings everything together with a smooth, rich flavor.
  • Salt & Pepper – Simple seasonings that enhance all the fresh flavors in the salad.

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Cucumber Tomato Salad.

Step 1 - Cut the cucumbers and tomatoes in half and remove the seeds.

Cucumber Salad is a great side dish and light lunch. I will share with you a few of my favorite ideas.

Cucumber Tomato Salad Leftovers

If you have leftovers after making this recipe, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish (like a wrap!).

You can keep this salad in the refrigerator in an airtight container for up to 2-3 days.  I think this salad is even better the second day because the flavors have marinated a little.

What dressing goes on a Cucumber Tomato Salad?

A simple vinaigrette made of olive oil and vinegar is the most common dressing for a cucumber tomato salad.

YES! This recipe is naturally gluten free, just make sure you check all your labels before you use the items.

This quick and easy Cucumber Tomato Salad is perfect for a light lunch or side salad at dinner. You will love the mix and flavors and the freshness of the tomatoes and cucumbers in this salad.

Ingredients 

  • 1.5 lb English cucumber
  • 1/5 lb Roma Tomatoes, seeded (6-8)
  • 1 red onion
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil, extra virgin
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions 

  • Cut the cucumbers and tomatoes in half and remove the seeds.  Cut each into roughly 1″ chunks.  Finely slice the red onion into half moons and combine all of the vegetables in a large bowl.
  • Whisk together the vinegar, oil, salt and pepper and then pour over the veggies and toss to coat.
  • Refrigerate for 1 hour to overnight, then toss and serve chilled. Enjoy!

    You can use some dried onion flakes if the red onion is too strong for kiddos.

    The picture shows an herb in it. Basil? What is it?

      It was just parsley I used to garnish it to make it look pretty! You can use almost any fresh herb in this salad with tasty results if you want to!
