  • Cranberry Brie Puff Pastry Bites Recipe

My favorite holiday recipes are the ones that look impressive on the appetizer table but don’t take a ton of time or effort to make. These Cranberry Brie Bites check both boxes!

I love the combination of creamy, melty brie, sweet-tart cranberry sauce, and flaky golden puff pastry. They only need a handful of ingredients and a few minutes of prep, which makes them especially great when you’re already juggling a million things before a holiday gathering. They’re easy to make, pretty enough for a holiday party, and always a fun addition to the appetizer spread!

Why I LOVE this recipe!

  • Simple ingredients – Just 4 easy-to-find ingredients to whip up this delicious appetizer.
  • Amazing flavor combination – Brie and cranberry! Need I say more?
  • Customizable – Try other filling flavors, other soft cheeses, make them savory…you really can make these just the way you like them.
  • Impressive – These look and taste so good that no one at your next holiday party will know you only spent 10 minutes prepping.

This Cranberry Brie Bites Recipe is as simple as promised! Just 25 minutes for a crowd-favorite appetizer!

In this section I am going to go through a few tips and tricks I use for how to make Puff Pastry Cranberry Brie Bites to get the absolute best and most delicious results.

Make sure to scroll to the bottom for the FULL recipe card.

Ingredients + Substitutions

ingredients for baked cranberry brie bites.
  • Puff Pastry – You’ll need 1 sheet of puff pastry for this recipe. If you can’t find puff pastry, crescent roll dough will work too. Keep in mind that the texture and cook time will be different if using crescent roll dough!
  • Brie Cheese – If you don’t like brie cheese, other soft cheeses (such as goat cheese) will work too.
  • Cranberry Sauce – Canned or homemade cranberry sauce will work.
  • Rosemary – A sprig of fresh rosemary is the perfect garnish!

Make sure to see the recipe card at the bottom of this post for the full quantities and ingredients list.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Make them nutty – Add a nutty crunch to every bite with a sprinkle of chopped pecans or walnuts.
  • Try another flavor – Swap the flavor using raspberry jam, strawberry jam, apricot jam, or even fig jam in place of the cranberry sauce.
  • Make them savory – Swap the cranberry sauce out for pepper jelly for a kick of heat or make them a little bit savory with a dollop of pesto or a sprinkle of bacon bits.

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Cranberry Brie Bites with Puff Pastry.

brie cheese being cut into cubes.

Cut the brie into 24 cubes.

puff pastry dough being cut into squares.

Bring the puff pastry to room temperature, then cut into 24 rectangles.

Spray a mini muffin tin with cooking spray, then place 1 piece of puff pastry into each space.

Add a cube of brie cheese and a dollop of cranberry sauce to each puff pastry cup, then bake at 400ºF for 15-18 minutes or until golden brown and puffed.

    Recipe Tips

    1. Bring the puff pastry to room temp – Bringing the puff pastry to room temperature for 20-30 minutes before cutting just makes it easier to work with and shape without it cracking.
    2. Spray the pan – Trust me on this one. A light layer of cooking spray makes it so much easier to get the brie bites out of the pan.
    3. Chill the brie – Before slicing, pop the brie in the freezer for 10 minutes to help it firm up. Brie is a very soft cheese, so it’s easier to work with when it’s a little bit cold.
    4. Remove immediately after baking – These bites are pretty easy to get out of the pan while they’re still hot, but become much harder to remove once they cool. I recommend taking them out of the muffin tin right away after baking!

What to Serve with Brie and Cranberry Bites

This delicious appetizer is full of seasonal flavors, but will pair well with holiday and non-holiday recipes alike!

Choose one or several of these appetizers to create a whole spread that is sure to impress your guests.

    • Sweet and Spicy Pecans – These Sweet and Spicy Pecans are perfect for holiday party snacking! They’re made with pecan halves coated in butter, sweet and spicy seasonings, brown sugar, and maple.
    • Shredded Chicken Sliders – You can always count on a slider to be a hit at a party, and these Shredded Chicken Sliders are no exception. They’re made with soft and sweet hawaiian rolls piled with tender shredded chicken, melty provolone, and a sweet and tangy honey mustard glaze.
    • Crockpot Onion Dip – You can’t have a party without a chip dip! And this Crockpot French Onion Dip is a favorite. It’s creamy, rich, and delicious!

    Cranberry Brie Bites Leftovers

If you have leftovers after making this recipe, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

    • in the refrigerator for 3-4 days
    • in the freezer up to 2 months

    Recipe FAQ’s

What kind of pastry is best for brie bites?

I love using puff pastry for it’s light, flaky texture. However, if you prefer to use crescent roll dough, then that will work too! Just keep in mind that crescent roll dough will bake differently.

Do you eat cranberry brie bites hot or cold?

Either way! These are delicious straight out of the oven, but also hold up as they cool if you’re serving them at a party.

Can you make cranberry brie bites the day before?

You sure can! These Baked Cranberry Brie Bites will last for 3-4 days in the fridge, so you can absolutely prepare them ahead of time so they’re ready to go.

    • 6 ounces brie cheese
    • ⅓ cup cranberry sauce
    • 2 tablespoons fresh rosemary

    Instructions

    • Preheat oven to 400˚F.

    • Unfold the puff pastry and cut into 24 rectangles.
Cut the brie into 24 cubes.
    • Spray a mini-muffin tin with cooking spray.
Place 1 piece of puff pastry in each space. Then add a cube of brie cheese and a dollop of cranberry sauce.
    • Bake for 15-18 minutes or until the edges of the pastry are puffed and golden brown.
Once you remove from the oven, IMMEDIATELY remove the pastries from the muffins tin using a knife. Be careful as they are still very hot. (See note)
    • Add a small sprig of rosemary to the top of each one for garnish. Serve warm or at room temperature.

    Recipe Notes

It is very important that you remove the pastries from the muffin tin immediately. They are easy to remove when hot, but get very hard to remove as they cool. Even waiting 5 minutes will make them much harder to remove, so for the best results, remove them right away!
