When fall comes around, I’m ALL about the Crockpot dinners! Though let’s be honest, I love them year around … I just like slow cooker meals extra this time of year. Especially slow cooker sausage dishes!

This recipe for sausages and potatoes in the slow cooker is one of my new faves. It’s got sliced smoked sausage, buttery Yukon gold potatoes, and fresh green beans tossed with onion soup mix (yum!), butter, a splash of Worchestershire sauce, and some Cajun seasoning to bring it all together. The combo is lick-your-plate good!

Why I LOVE this recipe!

  • Quick & easy – We’re talking less than 10 ingredients and a bit of chopping, then the Crock Pot does the rest of the work.
  • Meal-in-one – With protein in the sausage and green beans plus a hearty starch in the potatoes, and lots of nutrients all around, this smoked sausage and potatoes makes an easy meal in one. Sometimes I like to round it out with garlic bread or cornbread and a green salad, and sometimes I like to serve it up in a bowl all by itself. It’s terrific either way!
  • Great for meal prep – You can prep this one a handful of ways. Mix all of the uncooked ingredients together and place in an airtight container or storage bag, refrigerate for up to 3 days, then dump in the Crockpot on a busy morning. Or you can make this smoked sausage and potato recipe over the weekend, store in individual portions, then warm it up for lunches and dinners during the week.

Ingredients + Substitutions

Ingredients for Crockpot Sausage and Potatoes
  • Potatoes – You’ll want to use Yukon Gold potatoes, which are famous for their buttery flavor and thin skin. You don’t even have to peel them, which adds both flavor and nutrition to your smoked sausage and potatoes. Cut them into bite-size pieces.
  • Onion – I like to use yellow onion, but white or red will work too.
  • Cajun seasoning – Grab your favorite brand at the store in the spices section, or make your own Cajun seasoning.
  • Garlic – Four cloves of fresh garlic, minced finely.
  • Sausage – I like to use smoked sausage. If you have a favorite sausage, feel free to swap that in; you’ll just want to start with a cooked sausage.
  • Green beans – One pound of fresh green beans. I like to leave them whole, but you can cut them into bite-size pieces if you prefer.
  • Onion soup mix – My secret weapon for amazing flavor in this Crockpot sausage, potatoes, and green beans dish.
  • Worcestershire sauce – Just a couple of tablespoons adds a touch of sweet, savory flavor.
  • Butter – It will melt down and, together with the soup mix, Worcestershire sauce, and drippings, creates the most magical, delicious sauce!

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Slow Cooker Sausage and Peppers– Swap in two chopped up bell peppers for the green beans.
  • Spicy Crockpot Sausage and Potatoes– Choose a spicy sausage such as andouille and add a few dashes of Tabasco at the end.
  • Crockpot Chicken Sausage and Potatoes– Swap in chicken sausage for a leaner option.

Recipe Step by Step

Step one for making Crockpot Sausage and Potatoes - add the potatoes to the Crockpot

Add the potatoes to the slow cooker. Sprinkle with Cajun seasoning and minced garlic.

Step 2 for Crockpot Sausage and Potatoes - add the vegetables and sausage

Stir until evenly coated, then add the sliced sausage, onion, and green beans.

Step 3 for Crockpot Sausage and Potatoes - top with butter

  1. How to prepare green beans – To prep fresh green beans, give them a rinse then lop off the ends with a knife.
  2. Don’t peel the potatoes – Just give them a good scrub and they’re good to go! Yukon Golds have a thin, tasty skin that doesn’t need to be removed.

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Use pre-chopped veggies – Buy already-chopped onions and garlic at the grocery store to skip on having to chop the vegetables.
  • Prep ahead – Place all of the ingredients for this easy Crockpot sausage and potatoes into a zip-top bag or airtight container. Refrigerate up to 3 days in advance. When you’re ready, dump it all into your Crockpot for a zero-effort dinner a few hours later!

Making this Crockpot Sausage and Potatoes recipe into a freezer meal is simple! Follow the steps below and you can store this recipe in the freezer for up to 6 months.

How to Freeze Crockpot Sausage and Potatoes After Cooking

  1. Allow to cool to room temp then transfer to a freezer-safe container or bag. Label and transfer to the freezer.
  2. Thaw overnight in the fridge.
  3. Reheat in the microwave or oven.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the freezer up to a month

  • Cheesy Sausage and Potatoes– This smoked sausage recipe with potatoes is excellent with cheese! Place leftovers in a casserole dish and top with shredded cheddar cheese. Bake until the cheese is melted and the sausage and potatoes are warmed through.
  • Sausage & Potato Scramble– Fry leftover sausage, potatoes, and beans in a non-stick skillet with a little olive oil or butter, then whisk together some eggs with salt and pepper. Pour the eggs into the skillet and stir until cooked through. Serve topped with shredded cheese if desired.

Can you cook sausage and potatoes in slow cooker together?

Absolutely! Add them at the same time and cook on low or high until the sausage is cooked through and the potatoes are fork-tender.

Are Yukon Gold potatoes the same as yellow potatoes?

Yukon Gold potatoes are their own variety of potato. They belong in the category of yellow potatoes but they are their own type.

Ingredients 

  • 2½ pounds Yukon gold potatoes
  • 1 yellow onion, chopped
  • 1 tablespoon cajun seasoning
  • 4 cloves garlic, minced
  • 16 ounces smoked sausage, sliced
  • 1 pound green beans
  • 1 packet onion soup mix
  • 2 tablespoon worcestershire sauce
  • 4 tablespoons butter

Instructions 

  • Cut the potatoes into eighths or small bite-sized pieces. Chop the onion into 1 inch pieces.
  • Add the potatoes and onions to the slow cooker. Sprinkle with cajun seasoning and minced garlic and stir to evenly coat.
  • Top the potatoes with sliced sausage, and then green beans. Pour the onion soup mix over the green beans, and add the Worcestershire sauce.
    Cut the butter into pats and place them over the top.
  • Cook on high for 3.5-4 hours, or low for 4-5 hours, or until the potatoes are tender.
    Once done, mix everything together and serve warm in bowls.

Substitutions: Red potatoes can be subbed in for the Yukon Golds. 
How to Store: Keep leftovers in an airtight container in the fridge for 3-4 days.
