This Sheet Pan Bacon and Egg Breakfast Hash is a hearty, flavor-packed, and protein-packed breakfast! It’s made with a crispy hash brown, pepper, and onion base topped with salty bacon, eggs, and finished with melty cheddar cheese. Just 10 minutes of prep needed for this easy sheet pan breakfast!

I don’t know about you, but I LOVE an easy breakfast. Some days I want to spend my morning cooking and some I want a homemade breakfast without the hassle of spending a bunch of time on it!

This Sheet Pan Bacon Egg Breakfast Hash is the best of both worlds! You get the delicious, homemade breakfast, but with very little prep and time.

  • Serves a crowd – What’s better than prepping breakfast for a crowd in just one pan?

This Breakfast Hash recipe is as simple as promised! Just 25 minutes total for a family friendly breakfast or brunch.

In this section I am going to go through a few tips and tricks I use for how to make Breakfast Bake with Hash Browns to get the absolute best and most delicious results.

Ingredients + Substitutions

  • Cooking Oil – Use any neutral cooking oil to brush over the sheet pan. This helps prevent any sticking for much easier cleanup!
  • Potatoes O’Brien – I like to keep it super easy with a frozen mix of diced hash browns with peppers and onions (also known as potatoes o’brien!)
  • Bacon – I recommend using thick-cut bacon so it cooks just right.
  • Salt and Pepper
  • Eggs
  • Cheddar Cheese

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Make it vegetarian – Skip the bacon entirely or swap it out for a vegetarian bacon.
  • Add other veggies – Kick the nutrition up a notch with kale, broccoli, mushrooms, you name it. If you add veggies, be sure to chop them pretty small and toss them in oil before cooking to ensure they cook properly.
  • Use another meat – Swap the bacon out for breakfast sausage or ham. OR make a meat lover’s version with all three!

Recipe Step by Step

I am going to highlight a few key steps in the recipe here, but make sure to jump down to the recipe card for comprehensive instructions on how to make Hash Brown Breakfast Bake.

Brush oil over a large sheet pan, then spread the potatoes over the pan in a single layer.

Cut the bacon into small pieces, then layer that evenly over the top of the potatoes. Bake for 12 minutes.

Remove the pan from the oven, then crack the 6 eggs evenly over the top of the hash browns. Sprinkle cheese over top.

Bake for another 8-12 minutes or until the eggs are cooked and the cheese is melted, then serve and enjoy!

Recipe Tips

  1. Grease the pan – Use a neutral-flavored oil to lightly coat the pan to prevent the potatoes from sticking as they cook. For super easy cleanup, line the pan with aluminum foil or parchment paper before greasing the pan.
  2. Distribute everything evenly – Be sure that each of your ingredients are distributed evenly across the pan for even cooking and easy serving.
  3. Bake the eggs to your liking – Prefer a runnier egg? Bake for just 8 minutes. Prefer them more well done? Bake for up to 12 minutes!

What to Serve with Hash Brown Breakfast Bake

Since this protein based breakfast has the delicious flavors of eggs, bacon, and cheese, it will pair well with many of your favorite sweet or savory breakfast dishes!

Choose one or several of these side dishes to create a wholesome, well-rounded dinner. There are both classic options and some healthy options to keep it light.

If you have leftovers after making this recipe, then it is your lucky day! They save and reheat well, and can make the start of another delicious dish.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days
  • in the freezer up to a month

Recipe FAQ’s

Why are my sheet pan eggs rubbery?

Rubbery eggs are usually overcooked eggs! Be sure to cook the eggs for just 8-12 minutes (depending on how well done you like them), and no more for that perfect texture!

Do I need to cook the bacon first?

Nope! The bacon gets layered right into the pan along with the other ingredients and cooks perfectly every time.

Ingredients 

  • 1 tablespoon cooking oil
  • 28 ounces frozen potatoes o brien, (diced hash browns with peppers and onions)
  • 8 ounces bacon
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 6 eggs
  • 1 cup cheddar cheese

Instructions 

  • Preheat the oven to 400˚F.
  • Brush the oil over a large sheet pan. Spread the potatoes over the pan.
    Cut the bacon into small pieces, then sprinkle the bacon over the hash browns.
  • Bake for 12 minutes. Then remove from the oven.
    Crack each egg and place one over the hash browns. I evenly space them over the pan putting one in each corner of pan and two in the middle. Sprinkle the cheese over the top.
  • Return to the oven and bake for 8-12 more minutes or until the eggs are cooked to your preference.
