Family Meal Plan
MONDAY
- Main Dish: – Chicken and Stuffing Casserole– This casserole is SO EASY and SO DELICIOUS! Packed with veggies and savory fall flavors, this family-friendly casserole is the perfect weeknight meal.
- Side Dish:
- Jiffy Corn Casserole– This is my all time favorite side dish and perfect for making with Chicken and Stuffing Casserole!
- Baked Asparagus– This simple veggie complements the flavors of the casserole well!
- Squash Casserole– Comfort food with comfort food!
TUESDAY
- Main Dish: Cheesy Beef Enchilada Skillet– I love this meal because it can be served customized to each person’s likes. My kids get tortillas, while my husband and I do bowls. Each family member gets to customize the toppings any way they want!
- Side Dish:
- Mexican Rice or cauliflower rice
- Black beans or refried beans
- Toppings – Sour cream, shredded lettuce, pico de gallo, black olives, guacamole, etc
WEDNESDAY
- Main Dish: Outback Copycat Alice Springs Chicken– If you love Outback, you will LOVE this recipe! If you haven’t had Alice Springs Chicken, you are in for a treat.
- Side Dish:
- Mashed Potatoes– This recipe is super simple and extra creamy
- Roasted Green Beans– The classic way. Simple and delicious!
THURSDAY
- Main Dish: Garlic Pork Tenderloin – This recipe is quick and makes you feel fancy!! The pork tenderoil is super tender and easily made with just one skillet.
- Sides:
- Tomato Basil Mozzarella Salad– This easy salad is the perfect side dish that is equally quick and delicious
- Oven Roasted Vegetable Medley – One of my most favorite family recipes
- Garlic Bread – This recipe has rave reviews!
- Sides:
FRIDAY
- Main Dish: Creamy Cauliflower Soup– If you try any recipe this week, let it be this! Your kids may think they don’t like cauliflower, but this soup has changed many minds. It is just THAT good!!
- Side:

- Cheddar cheese
- Crumbled bacon
- Chives or green onions
- Sour cream
- Broccoli crowns

- Best ever Fudge Brownies– I can’t get enough of these, and neither can my friends and family. I get regular requests to make them every single week!
