Family Meal Plan
MONDAY
- Main Dish: – Caprese Chicken Sheet Pan Dinner– Your veggies and protein cook up all on just one baking sheet with this easy (and super delicious) recipe!
- Side Dish:
- Kale Salad– Combined with parmesan and the best lemon vinaigrette, this salad is one we love on repeat!
- Best Garlic Bread– Perfect easy side to pair with this dish.
TUESDAY
- Main Dish: Queso Chicken Casserole– Comfort food at it’s finest!! This simple casserole combines tender chicken in a queso sauce all layered on top of refried beans to make it hearty and filling. YUM!
- Side Dish:
- Mexican Rice – Our go to recipe.
- Mexican Corn Salad – light, healthy and FULL of flavor!
WEDNESDAY
- Main Dish: Southwest Sloppy Joes– Not your average sloppy joe! This dish is loaded with flavor and super hearty!! Not to mention that the leftovers get fought over at our house!
- Side Dish:
- Hamburger Buns– I like to give the option to eat on a bun or in a bowl with toppings
- Veggies and ranch- perfect healthy side. Try it with our homemade ranch dressing!
THURSDAY
- Main Dish: Easy Butter Chicken – This dish is so packed with flavor! Quick and easy, it has become a favorite with my kids.
- Sides:
- Basmati Rice– Basmati is traditional, but you can use jasmine or your favorite long grain rice .
- Sautéed Spinach– I like to keep my serving lower carb by serving over spinach.

FRIDAY
- Main Dish: Southwest Sloppy Joe Nachos– Use the leftovers from Wednesday to make this kid friendly favorite. Layer a baking sheet with tortilla chips. Add cheddar cheese, then dollop with the sloppy joe mix, and top with extra cheese. Bake at 425˚F for 6-10 min or until the cheese is melted and the toppings are heated through.
- Side:
- Dessert – Soft Sugar Cookies– I had a reader messaging me this week about how much she loves these. I have to agree, they are a family favorite here too!!
LUNCH
- Sun dried Tomato Turkey Pinwheels– If you need to make lunch a little more interesting, try these Turkey Pinwheels! The Sun-dried tomato spread makes them irresistibly delicious!
