Family Meal Plan
MONDAY
- Main Dish: – Crockpot Tuscan Chicken– This is my newest recipe and already getting rave reviews from readers! Make it when you are super busy since it is so easy and the slow cooker does all the cooking!
- Side Dish:
- Roasted Asparagus– Cooks quickly in the oven and makes a great side
- Mashed Potatoes– I like to serve the chicken right on top of potatoes to soak up all the juices!
TUESDAY
- Main Dish: Cheesy Taco Skillet– It is like tacos but easier and even tastier! What I love most about this dish is that each person can pick their style, so one person can eat it in a taco shell, and the other as a bowl, just as easy!
- Side Dish:
WEDNESDAY
- Main Dish: Greek Chicken Bites– This is one of my go-to quick dinners. These little bites of chicken are perfectly seasoned and made in minutes. They kind of remind me of Chick-fil-a’s grilled chicken nuggets, so you know it is going to be a winner with the whole family! (Use my Honey Mustard Sauce if you want some CFA quality dipping sauce too!)
- Side Dish:
- Pita Bread
- Sauteed Garlic Spinach
THURSDAY
- Main Dish: Tuscan Chicken Pasta– Use leftovers from Monday’s Crockpot Tuscan Chicken, to make this family hit! I start with a pan of this Easy Alfredo Sauce, then stir in the leftover Tuscan Chicken and toss with pasta. There is not a bite left on anyone’s plates after this meal!
- Side Dish:
- Garlic Bread – Seriously the best!
- Tomato Mozzarella Salad – A classic recipe and works great to pair with this dish!
FRIDAY
- Main Dish: Chicken Cobb Salad (or wrap!)- For this meal you can use leftover Greek Chicken if you have it, or if not you can use any shredded chicken or even rotisserie chicken from the store. This loaded meal sized salad will keep even those that need a hearty dinner full! If you have eaters that don’t want salad as a main course, just throw a big scoop of the salad in a large tortilla, roll it up and call it a wrap.
- Side:
- Squash Casserole– You don’t have to have any side with this Cobb salad, but this is a hearty one that is super yummy, so if you have the time, I highly recommend it!
- Side:
- Dessert – White Chocolate Macadamia Nut Cookies– These are THICK-CHEWY-SOFT delicious little gifts from heaven! One of the tastiest homemade cookies out there!
APPETIZER
- Buffalo Chicken Pinwheels – This are always a hit at a party or potluck! They are easy finger food, but hearty enough to fill you up!
