Family Meal Plan

Monday
- Main Dish: Creamy Dijon Chicken — Husband approved! Every time I make this the whole table says “what is THIS?!” and goes back for seconds. With simple ingredients, and one pan you can have this family friendly dinner ready to serve in just 20 minutes.
- Side Dish:
- Smashed Potatoes — These are everything a potato should be – tender on the inside and crispy on the outside – and that’s why everyone will love these!
- Garlic Parmesan Broccoli — The combination of garlic and parmesan on these roasted veggies is perfect with the creamy mustard sauce. These broccoli bites are often our go-to for a side because they’re easy enough for any night of the week!
Tuesday
- Main Dish: Creamy Chicken Tortilla Soup — Need a make ahead meal that’s also simple enough to throw together any night of the week? This is it! Taco Tuesday, but make it soup!
- Side Dish:
- Toppings — Shredded cheese, crushed tortilla chips or tortilla strips, cilantro, lime juice, pickled jalapeños, diced tomatoes, red onions, sliced avocados, or pico de gallo.
- Homemade Flour Tortillas — These are so much easier to make than you realize. Give it a try!
- Mexican Corn Salad – This light and refreshing salad is healthy, delicious, and so easy to make.
Wednesday
- Main Dish: Baked Chicken Breast — This chicken comes out perfectly tender, juicy, and flavorful every.single.time. Make sure you read my notes so that you can have the BEST results!
- Side Dish:
- Greek Chicken and Cauliflower — You can actually add your chicken breast right into this mix if you’d like to!
- Crispy Roasted Brussels Sprouts — These brussels have the best crispy edges that we can’t get enough of.
Thursday
- Main Dish: – Korean Beef Bowls — These bowls have tons of flavor and each person can top them off anyway they like so it is perfect for picky eaters.
- Side Dish:
- Coleslaw — When I make bowls I always like to have a little crunch mixed in with the soft rice and tender beef. This coleslaw isn’t your traditional one and I was really excited when I came up with it!
- Toppings Ideas — Spicy Mayo, Fried Egg, Fried jalapenos, Yum Yum Sauce, tempura crunch, sesame seeds, green onions, carrots, pineapple, pickled jalapenos
Friday
- Main Dish: Hot Honey Chicken Tenders — 7 ingredients and 30 minutes from start to finish, these hot honey glazed chicken tenders are super simple and easy to make.
- Side Dish:
- Buttermilk Cornbread — The sweetness of the honey balances the spice of the hot sauce perfectly!
- Tomato Mozzarella Salad — I could eat this salad all day, everyday! The fresh, bright flavors balance the sweet heat of the hot honey chicken tenders. It’s even better the second day so make sure you have extra for lunch!
- Dessert – Churro Cheesecake Bars — Because of the very first step in this recipe, you will not believe how simple these are to make! They are creamy, a little tangy and have a sweet crunch from the cinnamon sugar. They are honestly irresistible!
Appetizer
- Million Dollar Dip — With a name like this, you know it’s going to be good! You can serve this to a crowd or keep it to yourself for some yummy snacking. I like to serve it with carrots and crackers.
