Each week, we share a FREE meal plan to help you figure out what’s for dinner! These family meal plans are thoughtfully crafted to give you options for a main dish, and two side dishes for each week day with a special emphasis on meals both kids and adults will enjoy.

Family Meal Plan

MONDAY

  • Main Dish: – Chicken Carnitas– This slow cooker recipe kicks the new year off right! It is high in protein, and packed with flavor! You can use it to make tacos, salads, burrito bowls, and more. The best part is, it takes minutes to prep, the slow cooker does the work, and you won’t believe how incredibly delicious it is!
  • Side Dish:
    • Cilantro lime rice– This is perfect for making burrito bowls or on the side for tacos. If you want to keep it lighter go for a cauliflower rice.
    • Mexican Roasted Vegetables– This is one of my favorite sides! So much so, that I often make double to have extra for lunches!

TUESDAY

  • Main Dish: – Sausage Pesto Penne Pasta– This recipe is a combo of a quick sheet pan meal and a filling pasta dinner. It takes smokey sausage, caramelized roasted veggies and pesto all combined for a hearty pasta meal. SO GOOD!
  • Side Dish:
    • Kale Salad with with Lemon Vinaigrette– This salad is a copycat of one of my restaurant favorites from our time in Rhode Island
    • Family Favorite Garlic Bread– the secret to making it taste so good is in the spread!

WEDNESDAY

  • Main Dish: Roasted Garlic Cauliflower Soup– This soup is perfect for January! It is light and healthy, SO EASY to make, and perfectly cozy and warm for a cold night. What I love about it though is that it is great for families since you can top it up anyway you like! I prefer it with just a little cheese, but my boys love to load it up with bacon, cheese, onions, and even sour cream. You can make it as hearty as your heart desires, or even make it vegan!
  • Side Dish:
    • Cheesy Pesto Bread– Perfect for dipping in the soup.
    • Mediterranean Chickpea Salad– Soup and salad make the perfect combo!

THURSDAY

  • Main Dish: Cheeseburger Stuffed Meatloaf– This isn’t a boring meatloaf, this one takes all the flavor of cheeseburgers and stuffs it into a quick and easy, extra cheesy dinner. This meatloaf is super tender, and bakes with a layer of cheese right inside for the best flavor combo!
  • Sides:
    • Baked Potato Wedges – These are my favorite not fried french fry! They are quick to make and can bake in the oven with the meatloaf.
    • Corn on the Cob with Garlic Herb Butter– One of the tastiest sides out there! Seriously! You can also make the corn on the cob in the Instant Pot here!

FRIDAY

  • Main dish: Carnitas Enchiladas– Use your leftover chicken carnitas to make these amazingly delicious enchiladas!
  • Side:
    • Black Beans– This recipe takes canned beans to the next level!
    • Mexican Street Corn Casserole– One of my sites all time most popular recipes!
  • Dessert – Bakery Style Chocolate Chip Cookies–  The PERFECT Classic cookie! People always want the recipe!

APPETIZER

  • Avocado Corn Salsa– This is a great healthy dip to start the year of right – that is with tons of flavor and food that tastes great and fuels your body well!
