Family Meal Plan
We are super busy this coming week with all sorts of Thanksgiving activities for the kids. With that in mind, this next weeks meal plan gives you lots of meals that can pull double duty for easy dinner, lunches and breakfasts throughout the week!
- Monday: Pork Stuffed Sweet Potatoes– Switch up the normal routine and try this easy and flavorful recipe to start off the week. Bonus: Leftovers reheat well for lunches throughout the week! Add a side salad for a full meal!
- Tuesday: Chile Relleno Casserole– This easy casserole takes the flavors of a Mexican favorite and makes it super practical for a weeknight! {Pin it here since you will use it 2x this week!} Save the leftovers for an easy (and delicious) dinner on Friday! Serve it with rice (or cauli rice) and beans.
- Wednesday: Chicken Wild Rice Soup- Crock Pot Chicken Wild Rice Soup here -OR- Instant Pot Creamy Chicken and Rice Soup here! (Same soup, different cooking devices!) Don’t forget to add some garlic bread. That makes my kids super excited for soup meals!
- Thursday: Hashbrown Breakfast Casserole – Breakfast for dinner! One of my family’s favorite nights. Make this and then heat up leftovers in the morning for an easy breakfast! (You can also freeze them in individual servings to use next week!)
- Friday: Chile Relleno Stuffed Quesadillas- Use the leftovers from Tuesday. Follow the recipe at the bottom of the Chile Relleno Casserole post for these delicious quesadillas. They are a super quick and family friendly meal.
- BONUS- This Broccoli Slaw makes a perfect side dish, light lunch, or healthy dinner when topped with some grilled chicken or steak. It is a great thing to whip up at the beginning of the week because the broccoli is hearty enough to hold up well even after dressed so it even gets a little better as it sits in the fridge.
